Hold the button down until the three lines or dashes appear. Then you should be able to toggle between the two scales. When you get to the one that you want, hold the button down again until the three dashes disappear.
I am not sure there is a way to change its calibration. Mine also reads lower than actual. I still use a digital stick when I need a more precise measurement. It is usually 1° F lower than true temp. If you are getting a consistent differential the degree of error should give you what you need. The more accurate ones are much more expensive. It was most likely calibrated for Celsius diagnostics.
