If everyone had your mindset of newer/better things somehow being snobby simply by fact of being better you would have none of the luxuries you hold dear in your life, including vhs.
Did you connect the camcorder to the projector and then point it at the projected image? A very similar technique was used to create the swirling effects for the original Dr Who intro!
This is awesome. I've tried similar stuff by hooking up my camcorder (VHS) directly to my TV, but I never tried putting in external images like that 3d mouse you put in. How did you get new images into the feedback loop?
I use OBS studio to monitor and handle multiple output sources! I layered that nice little mouse in between the input (vhs) and final output (projector)

Are you using some sort of filters or software in between the camera and VHS to get those color and mirroring and other effects or is all of those live capture ? That’s so cool you got to have it projected like that
