How To Blend Lambic Beer?

  • How do you blend Lambic beer? Producers have a brewery full of barrels to select from, each with their own characteristic.
    They will sample from their barrels, select those to contribute to their Gueuze, dedicate others to fruit beers, and tag other barrels for continued aging.
    ➡️ Blending became popular because the spontaneous fermentation of the Lambic wort can have such unpredictable results.
    I was lucky to have Gert Christiaens from Oud Beersel explain how blenders uses their senses to determine which casks will blend best with others, and in which percentages, to create the final product.
    What I learned is that It’s an art, more than a science, utilizing the blender’s eyes, nose and taste buds to create a beer that is made in accordance with time-honored traditions.

      Can’t thank you enough. I learned so much from Gert and I was learning while filming. I’m grateful to share it with everyone and I hope the lambic series gives people a better perspective on lambic and some insight into the amazing people who make it.

      ​@@drinkdestinations I hope you get the chance to travel to Belgium soon again (I guess this was recorded way back, pre covid). Even though Belgium has a lot of different kinds of beer and breweries for you to visit - I would at least (lol) love to see you visiting breweries that produces flemish red ale and flemish old brown. They are not lambic - but the process with "souring" it is pretty close, even though they're different kinds of beers. It's a type of sour beer that I think is in the shadow of lambic and doesn't get the recognition outside Belgium as it deserves.
      Example of breweries that produce said beers: Liefmans, Rodenbach, Verhaeghe (who makes Duchesse de Bourgogne) and Omer Vander Ghinste (who makes Cuvee des Jacobins).

      I was just talking with Verhaeghe about an episode a few weeks ago. As soon as I’m able to travel this will be one episode I look forward to filming. I absolutely love rodenbach grand cru and Dutches. Thanks for sharing. -Jeff

    Fantastic content again and probably the most clear and concise explanation of how an oude gueuze is made that I've ever heard. I look forward to visiting this brewery once travel restrictions are relaxed. My favourite Oude Beersel lambic has to be the Krieklambik using the champagne method.

      @@andrewbayley1689 I really appreciate it. It vary between foudres as some where filled a year or two. I don’t remember any being over 3 - 4 years, but it’s been a while since I filmed.

      Anthony, thanks so much my man!! they all bring a certain complexity but the older lambic had acidity and super complex in flavor. I could drink that by itself. If you ever make it to belgium they will have young and old lambics to try which is such a great experience.     I can't help but think this guy is just maggot drunk the entire day. Walking around the brewery tasting every beer, constantly has a glass of beer in his hand, always tasting. I feel sorry for his liver.

      @@thegingerpowerranger gotcha! Yeah it’s interesting most brewers, winemakers, distillers I interview are around it so much that it’s actually the opposite. Most brewers like whiskey, most whiskey distillers like beer. It’s weird man, not saying there are some that drink daily and livers are hurting but for the most part people in the industry drink with intention. Salud from Mexico!
