- We picked up 50 lbs of beans this morning including a new variety we have never tried before. Now to prepare them for long term storage and to make up a batch of delicious bean soup with the cattle beans.
Products:
5-Gallon White Buckets with Lids, Pack of 5 amzn.to/41HOT3g

Bean and Bacon Soup with Vegetables
2 cups dry beans (We used our new cattle beans)
Rinse beans and drain. Place beans in a large pot and cover with fresh water to 2 inches above the beans. Bring to a boil and cook for ten minutes. Turn off heat and allow to sit for one hour. Drain and rinse and cover with fresh water slightly above the level of the beans and simmer for 1-2 hours.
While beans are cooking, fry 1/2 lb bacon, remove from pan, crumble, and set aside. In the same pan you cooked the bacon, add about 1 cup each of sliced carrots, diced onion, diced celery and on very low heat, saute the vegetables until the pan is deglazed and the bacon fat has been absorbed.
When the beans are nearly done, add the vegetables and the following:
2 tsp minced garlic
1 tsp each dried oregano and dried basil
8 oz tomato sauce
Salt and pepper to taste
Simmer for about 60 minutes until beans are soft, veggies are done, and flavors are blended.

I've been told that old beans couldn't be cooked till soft. We found several two-pound bags of pinto beans in a tote container and I'm pretty sure they are over10 years old. I decided to use my Instant Pot Max and pressure cook some for an hour to see if they would get tender. They did get tender, and I added pork, onions, garlic and salt for a great tasting soup. That was two weeks ago, and we didn't get sick and die, Lol
I also have 10 yr old beans and I just wash them and put them in the crockpot to cook all day with ham and onions and garlic, salt, and pepper. Yum 😋 the only thing good about colder weather. Warms the house and smells good all day.
To soften old beans add 1 tsp of baking soda to the final cooking water. Works great for cooking them on the stovetop or open fire if you do not have access to a slow cooker or instant pot.
I was given 50 lbs of old pinto beans and so far I’ve only canned them but they worked great.
I had some old beans and when I went to soak them the skins started coming off! Not just a few, the majority. I decided they were not good and tossed them. Broke my heart to toss em. They may have been edible still, idk
I have canned 30 year old beans. I am not sure where the idea comes from my beans turned out lovely.

I wonder what the speckles are from and I wonder why they went away with cooking. Does anybody know why cattle beans have speckles and that they go away when they are cooked?
@@kshoe5004 They are properly called Jacob's Cattle Beans. Named after Jacob in the Bible whose "cattle" ( sheep and goats) were ring striped and speckled . As are the beans, as they come off the vine. When they are cooked they turn a uniform color.
These are a very old, traditional bean from New England and eastern Canada. You can still buy them in grocery stores in the maritime provinces of Canada, and some northeastern states.

I love that you do not hide your mistakes! We are all going to make them, but learning from yours might prevent us from having wet beans and not knowing what to do with them!
My bean and lentil hack is to add one jar of salsa then the rest of the measurement you were going to put in of either broth or water depending on what you're making. It already has every single thing you were going to add anyway. You won't need to Salt it. It'll have the right amount of pepper. You don't have to measure out a bunch of other stuff. It's just ready.

Plastic buckets are porous and should be lined with a mylar bag to have your food be safe for years. I love how are you do all your research and are very thorough with everything you teach. Thank you so much for all of your diligence and willingness to share. Hugs

Please don't feel bad about not being able to lift those heavy bags at your Azure drop. There are people like me that enjoy helping, it gives me my good deed for the day and makes me feel better to know that I helped, I even load in vehicles too.

Thank you! It seems that others have no problem others too. The first time we were at the drop point, I was up in the back of the Azure truck helping to push/lift bags to the end of the lift and others were helping Pam gather our bags and take them to out vehicle. Jim

I’m so glad you made that mistake of wet beans! Of course I’m happy you discovered it too, but what I’m trying to say is I now know what it looks like…I know what to look for! Gamma lids are a struggle to put in place, for sure. I’ve never tried this method on 2 gallon buckets, but it works great for 5 gallon buckets-I place the whole lid, rim and screw piece on the new bucket, and then I sit on it; it usually takes about 3 “snaps” to complete. I’m not a tiny petite gal and I think that works in my favor😁

Soak beans over night. Pour off water. I use like 1/12 pounds of beans. Add two cans of diced tomatoes, one onion, 3 Tbsp Worcestershire sauce, garlic (as much as your heart tells you to) and fiesta brand seasoning makes a pinto bean seasoning. Add 3 Tbsps and then add 3 more. Add 1 can green chilies like hatch. All of this should be in a big pot. Put in enough water to make it soupy. Fill jars around 1/2 full with this bean mixture and then fill the rest of the way with water. Pressure can 70 minutes basically to cook them. I did a TikTok on it and got so much hate! But they are delicious. I’m not going to have a ham hock when shtf. Spices will save us!! 🥰🥰

I have a large supply of black beans, lentils, and garbanzos, but the most fun I have with beans is from Rancho Gordo, who supplies me with a wide variety of heirloom beans. These are grown in the US and Mexico by small farmers and used in local dishes. I can't recommend, and commend Rancho Gordo enough for supporting sustainable farming and keeping these heirlooms going. Royal Coronas are my favorite but every bean variety i have received from them has been outstanding.
I didn't know they made 2-gallon buckets. I have stayed away from the 5-gallon because, like you, I'm past the "heavy lifting" stage. And I have been wasting space in my totes due to the weight. The buckets will solve those problems. Thanks! And I love how you don't edit out the "oopsies" and, additionally, show/tell us the solutions. BTW, I was waiting to see when the Dr. Pepper was going to be added. Sooo glad it wasn't! LOL
I love azure standard! I didn't know they had cattle beans, I will order some next month. My Dad is diabetic, and beans are what keep his blood sugar down and steady. Thus, we eat a lot of beans, and I really appreciate having a wide variety just to keep things interesting.
Basmati rice has the lowest glycemic index of all the rices.

Glad the turmeric helped lower your wife's blood sugar. I tried it, using in food and capsules and it didn't help mine. Just my luck.
I find that interesting since beans really aren't low carb. Yes, lower carb than some foods, but they are there. About 45 carbs per cooked cup. The fiber in them does help. so net carbs ( carbs - fiber=net carbs) would be about 30 grams.
I haven’t tried the cattle beans either. The flavor sounds interesting. I will have to give them a try.
Cattle beans are really good. I use them for baked beans because they keep their shape so well and are so meaty. They are really good for chili too
I promise you that if you let those garbanzo beans soak overnight, they will be as large as regular ones. Love that you shared a mistake, and explained how to fix it, so no beans wasted.

Rose, try cooking them with smoked turkey (I use necks when I don't want a lot of meat). They impart a wonderful smoked flavor without the fat of the bacon.

OMGOODNESS Jacob's Cattle Beans are a New England favorite! They make THE BEST baked beans. We used to use them at my restaurant. They are very hard to come by around here these days. Great video, thanks. 😊

Also, we always soaked our beans, (rinsing a few times), over a couple of days in the fridge until they showed signs of minor fermentation. This removes the majority of the "gassiness" that beans are known for. Works like a charm. :)
Hope to find some Cattle Beans as I've never heard of them. We store Pinto, Navy, Great Northern, Kidney, small red beans as well as split peas, black eyed peas and lentils.

I also like azure standard. My first drop was about 4 months ago. Funny thing I was talking to a lady about wheat berries and grain mills. And she mentioned she watches rose red homestead and I was so excited because me too!! I ordered my mill because of a video you posted. And so far I like it.

OMGosh we LOVE the white and red speckled Jacob's Cattle bean variety! Adzuki and Cranberry also being favorites.
We eat so many varieties of beans, because they are heart healthy, delicious, nutrient rich and versatile. And I LOVE small chickpeas/garbanzo beans. They tend to taste better in my view.
I hadn't heard of cattle beans before :-) If you plan to store them long-term, I would recommend that you put them in heat-sealed Mylar bags with Oxygen absorbers inside the bags and then store those bags in the sealed buckets. Oxygen will eventually pass through the walls of the plastic bucket and, sadly, gamma seal lids are not reliably 100% Oxygen or moisture proof.
When I use Gama lids I find that if I start putting on the lid so I have two points that need to attach it is a less difficult to attach.
Also I pressure cook my soaked beans in my instant pot. I make all kinds of soup, plus you can make it in the morning and come home to hot soup because of the kp warm function.

We look at the idea that if we are able to "fix it" on camera with explanations, then we can help our viewers do the same/ something similar to save their food preparation and storage. Thanks for showing how to store the beans! I put my beans in buckets with gamma lids, but I wasn't sure if oxygen absorbers would work or last if I open the buckets.
Those cattle beans are pretty. I love pretty food. Like when I buy cherry tomatoes, I buy the assorted package of yellow, orange and red tomatoes.... because they're pretty in a salad..LOL.

We have a drop here as well where we live. I dont know how it its organized where you but our coordinator is very well organized. She has a small placard that she will write each persons name on that made a purchase. Then she will place them on the ground. As the truck unloads each persons order is placed by their name. She also has a list sent to her and knows who got what. Hope this helps.

Thank you so much. Rotor cuff surgery on my left shoulder, twice. I can only lift 50 pounds, 25 each arm. At the gym, three times a week but still 63.5 years old. I realize I can not do what I used to and I have to realize, believe, go with it. It's life. God Bless and stay safe.

I use the gamma lids on all my pails and discovered that if I put the rim on the carpeted floor, set the bucket upside down on it, if I sit on the bucket a rock a little it snaps right on. I struggled with a mallet so this has been a tremendous help. Hope you give it a try.

I find that if I put my bucket into my sink I can tip the bag to pour the bean/rice into the bucket. I love your videos!!
We’ve been eating more beans in our diet and we also buy in bulk from Azure Standard. I made a large pot of pinto beans and wanted a ham or bacon flavor so I added “Better than Bullion” Ham flavor and it turned out delicious. I always add bullion to my beans for the extra flavor in the juice. I’m excited to try the cattle beans so I went on Azure and added a 25 lb bag to my cart. Thanks
Jacob cattle are one of my favorite beans. I grew up with these beans and we baked them the same as we did Boston baked kidney beans. The same recipe but they had a different flavor. They are a sweet bean. Thank you for sharing where you got them as they are a difficult bean to get in bulk here in Maine

Pam I've stored my beans this way but we always freeze the bags first for about a week, let them come back to temp for about a week, and then bucket them up. If there are weevil eggs on the beans they will hatch and you will lose all of your preps :( !

I have seen (I think on Appalachia Homestead) a method of freezing for two days and then drying them out in a low temp oven before storing them
I wanted to suggest you put your bag in the sink to scoop from.

Don't feel bad about letting others do the heavy lifting. I'm sure for many years you helped others with physical tasks when they needed it. Now it's your turn to let others do the same. Think of it this way, you're giving them the chance to do a mitzvah- a good deed. You're letting them have the blessing of helping you. It goes both ways.

I've never heard of cattle beans. I will have to get some. I'm like you, when I saw them I immediately thought of chili. Better than Boullion has a ham flavor that is pretty strong. I often use that in dried beans along with bacon, ham, or ham hocks for a very tasty broth. Of course, I serve beans with cornbread, Louisiana style.

They peel off?! I’ve been cutting mine out with scissors and using packing tape to put them on my buckets. 😂

Glad you are branching out in the bean category. I cannot live without Navy beans cooked with a smoked ham hock. Love Speckled butter beans (southern thing) but my total crop failed in our drought. Q/A After I put my rice and beans in ziplock mylar bags, instead of a 5 gallon bucket can I use a storage tote like you put books and clothes and stuff in for space saving purposes because I don't have a lot of room. Or would it be better to stick to the 5 gallon bucket?

@@RoseRedHomestead No, I don't have a Gamma lid. I just have some storage totes and some 18 quart storage bins with lids. I'm trying to find a decently priced 5 gallon bucket.

Oh yum. I haven’t tried jacobs cattle beans before but I have seen seeds for them in seed catalogs. I think it’s very important having a variety of types of foods in our storage. Great video Pam. We got over a foot of snow today so I do believe I will be making bean soup tomorrow 🇨🇦🌷

I have grown Jacob's cattle beans before. They are easy to grow and I've never seen them for sale in the grocery store. I like variety too.
If you haven't tried Borlotti beans they are also an excellent choice. My favorite has always been pinto beans. I love them made with ground hamburger as well as the Ham Hock method. I grew up on pinto and navy beans. I have never tried cattle beans or mother hubbard beans. I am trying some new beans to me this year as well. Never too late too try new things and learn new things. We are retired and have more time to experiment than we used to.
I like how you took the beans out of the bucket and making sure no moisture in there for mold to grow and ruin your product, no telling how many people that could help . Might have been a accident but was it ???

I picked up some Mayocoba beans from Costco last year. Aka canary beans, they are yellow when raw but look pinkish brown when cooked. They are meaty but have a smooth meat and aren’t grainy. Mild flavored, they are from Peru. If you look for another bean I highly recommend them. I canned 20 quarts.
I canned some Mayocobas and they didn't hold up well. How did yours turn out?

I bought some organic trout beans when I was in Utah earlier this year, and what do you know, they are the same as Jacob Cattle beans! I can’t wait to can them. For now they are still in the original bag.

I have an amazing contact for Greek extra virgin olive oil and just know that a good HEALTHY drizzle of oil, along with a slice of Feta cheese will make for a delicious meal. Love your channel!
