    Hi it’s not a fried dish it’s a stew ,,,, as a Persian defo garlic and ginger, also never have long strand of saffron needs to be grinder down, also the lamb should have a couple of lamb bone with marrow, fry onion, diced, till change colour, add adveh, along with turmeric black pepper, alsoblanched vine toms with a teaspoon of Tom purée, slow cook with lid, simmer down after add boiling water just to cover, and remember salt adds at end as u can add but never take out, yellow lentil should be to rest in water then cleaned and rinsed, also a touch of sour grape juice just a drop then add 3-4 small dried limes remember to put a couple of knife holes in each also leave them in clean cooled water for 1hour, add couple of fresh chillis at the end of cooking if u like, one thing u got rite was the skinny fries but this goes with steamed Persian rice, with saffron,
