    Crushing the skin of the olive allows the bitterness to leave it more quickly, thereby enabling the olive to become properly seasoned and then usable by the master. Fascinating!

    We use to spend all day picking olives and soak them in two five gallon clay pots, then rinse 3 days each day with fresh water, then added all sorts of spices and vacuum pack via heating to certain temp. Soo good

    I married a Saad in Australia. His family are from Douma Lebanon. I had 4 children but my husband left as he didn't want to commit to being a Christian which was his free choice. Love the food I learnt to make and still make. 🍇🍋

    What a lovely family and they all come together to prune the olive tree and gather olives! I learned so much (and so did Sergio ha ha). I never knew the difference between the green and the black olives now I do and interesting the preparation it takes and you cannot eat from the tree as Sergio found out! I can only imagine the bitterness Sergio!! Love you guys! Thank you for inviting us into your family home!

    Good job Ruthie!!! Rhoda, it is So much fun watching. I was there the day Suhail slipped on the ladder---in fact, he just said he had done this forever with the ladder not straight. We all held our breath as he picked and this slipped. What a day. Such a fun adventure. The oil was wonderful.

    Apple trees in Vermont are also pruned like that. To keep the branches from growing to close together, and the trees from growing to tall.

    I am searching ways of cultuvating olive trees in my yard. I live in Brazil and the best adapted species was the israeli one, but we have to fertalize it the whole year. Because of the great amount of Sun light, they produced very much and dry, if not fertalized.

    I love olives black my favorite and green ones.we use green ones in our rice sometimes it brings out a great flavor oh by the way .Im American Puerto Rican born in USA born from Puerto Rico and black ones for garnises on salads or just a vegetable choice.thank you so sharing this .Sergio your mother is very pretty.May God bless your hard efforts on making this videos.Great job.

    I love olives--mostly green! I think it is because I am of Hebrew descent--the priestly tribe. This was so good to learn about the picking and pickling of the beautiful olive. Olive tree very pretty and the olive flower is sweet, but the fruit of the poor olive is impossible to eat! Jewish folk song, no?

    In Cyprus, we don't hit or shake the tree... We have special combs with handles - like a mini garden rake and you just pull along the branch and all the olives fall onto the nylon or nets..

    I remember my aunt would pickle olives, she would put them in an earthenware jar full of brine add laurel leaves and red pepper, she would close the jar with vine branches and let the whole thing steep in a cool dark room for a couple of months and after that magic tummy olives.

    I can't believe you're picking the olives one by one... In Cyprus, we use a special comb with a handle. We simply run it along the branch and all the olives drop into the net or plastic😉

    Also if you break some coriander seeds and mix with the olives you will get much more flavour together!
