Absolutely! While the recipe does call for a older/aged rum, El Dorado 5 is one of my favorite all purpose rums. You may a lose a little bit of the funk and complexity from not using a Jamaican rum, but the Demerara should still work really well with everything else. Let me know how it is if you try it! In the end, the only thing that matters is if the drink is tasty! :)
