Another quick tip to be sure bottom is cooked well and doesn’t turn out gummy, is to poke a few holes around inside the bottom crust with a fork before par-baking.

if we cannot find your onion/onion seasoning with all those other ingredients included in your onion seasoning , what then would the recipe have in it and the portions. i was going to make it, but now i can't , as i do not have your special onion seasoning and i also cannot find it. as i am sure others do not have that special onion seasoning also SO will you make another quiche , but use regular seasonings and of course the correct amounts of each seasonings. thank you
