From my experience, trees are still dormant in January and if you prune them, they will not feel a thing. They will wake up in spring as though nothing has happened to them.

My experience with pruning maples? I practice bonsaï now for over thirty years. When I prune maple twigs during winter, I cut right under the top budds of the twigs/branches that should be removed. So, I leave the new and future budds (at the base of the twig or branche) with branches (now without budds at the top) as long and large as possible! Those branches, now without budds at the top/end, will wither very slowly and, by doing so, will still protect and feed the new budds at the base. Those new and future budds, sometimes can hardly be seen or even not be seen... I live in Western Europe. Untill now, I always did that without any problems. Your climate zone is also quite mild (even milder than over here) so it should be no problem. Good luck!
Out here in the USA and by professionals i was told best time to prune maples is spring i guess after the leafs harden off. The maples can then repair themselves alot faster during the spring but i do some pruning in jan and they dont leak water as much
I forgot: normally, I prefer pruning in spring, after the first leaves and twigs have hardened out a bit... However, I think pruning in winter in your climate zone, should be possible if you do not prune just above the new and future budds: then they might be harmed. So be careful.

I’ve had similar experience with maples bleeding sap if trimmed in early fall and late spring. 🍁 seems to be a small trimming window of time for maples…
My first prune of the season is after the first flush has hardened off, dont seem to have your problem😮
@@percyacutt3110 oh Yes! Same here. Once leaves are out, no problem with trimming, throughout, late spring-summer.

カエデ、モミジの剪定は原則年末までと言われています。
年明けから新梢まで一般的な落葉樹とは異なり根と主となる幹は活動してるため水が吹きます。
