From the look of it, it's definitely the cut from chicken thigh and the drumstick. Gennaro also cooked this recipe on Jamie Oliver's Food Tube channel. There, he too used drumstick and thigh with their bone and skin still on.
it's chicken thigh. And you want to use chicken thigh for that recipe, because breast will be too lean and it just won't be as good.

From the moment the guest start their starter to finish. It roughly about 30+ minute

they can cook the chicken before service, keep it in a hot box and when the dish is requested they just put the chicken with the ingredients and let it soak up all the juice from the sauce. Roughly 10 minutes to prepare during service.
