Hello there. Please let me know what is the fat percentage of the milk and what is fat percentage of the cheddar also? I do exactly the same process but my sauce is not that velvety smooth, it doesn't have any lumps but it's alot thicker.

You can use anything oil,salted,unsalted,margarine
