- Quick and tasty breakfast recipe. New recipe in my cooking book.
Ingredients:
White Rice = 2 cup
Potato = 1 boiled & mashed
Onion = 1 medium chopped(1/2 cup)
Carrot = 1 small chopped(1/4 cup)
Capsicum = 1/4 cup chopped
Tomato = 1 chopped(1/4 cup)
Coriander leaves few chopped
Green chilli = 1 chopped
Ginger = 1 inch chopped
Curry leaves few chopped
Red chilli flakes = 1/2 tsp
Black pepper powder = 1/2 tsp
Cumin/jeera = 1tsp
Salt to taste
Baking soda = 1/2 tsp or Eno fruits salt 1tsp
Water as required
Oil = 3-4 TBSP

I am quite excited about this recipe. I’m allergic to eggs and have been diagnosed with systematic nickel syndrome, in other words I can’t eat foods high in nickel...all of which make breakfast in particular SO challenging! I think this solves it! Thank you very much!

In Assamese, its called Panipitha.... Very famous old ethnic Assamese dish.... But after grinding rice, we kept it under sunlight for 3/4days......become more delicious 😋

Keeping in Sunlight for3/4 days, helps the batter ferment naturally. The batter rises (swells) & it also becomes slightly खट्टा after fermentation. I believe it is better for health point of view, also.🙏

Yes you can. Skip soda
I think the batter could be left to ferment little for few hours or may add curd

Adding some sprouts or soaked lentils along with rice will add protein to it...making it more wholesome

Well, this is just another version of Uthappam, very common breakfast dish in South India. We use the dosa batter, add chopped onions and other seasonings and cook it on a well oiled pan.

Correct , but we do in dosa batter , here they replace urid dal with mashed potatoes. And rest of the added items are the same.

These ones look much better than Uttapams, it's almost like savoury pancakes....where children would like and love to eat because there's potatoes 😋 added to it.

R u talking abt cooked rice? Cooked rice will not gv that crunchy taste....
Sukanya Mukherjee , you are right.. cooked rice can never give that crunchy outcome, though potato is added. It’s better prefer ready made rice flour. Can add a little coconut too. But again everything should be given a round in mixie for a smooth batter. And to blend the potato well .
Ultimately good for children only 😃

I am fascinated how he end up with prefect round shape for every single one of them.. pro level skillsssss.
Its actually not that hard if you have the mini type of pans. Its the larger ones that are hard to get a round shape from. Also the batter is thin. So it spreads fast ^^
