No, stone walls without a wide rammed dirt core, is no insulation from freezing or to avoid being roasted by wildfire..... I would use a single rock wall enclosure to tank an outdoor latrine.
Greetings from Australia. You are pretty good at rock building. You have a good supply of flat sone and it fractures well. Its neat and looks good. You should try and build a free standing house. You would be good at that.

This would be much more useful, IF you hadn't gone equipped to carry the task out. How many hikers, scramblers, and climbers carry a large shovel? Plus an axe and a mini-pickaxe? Is this YOUR land. If not, who owns it? Is it public land. Do the laws, governing the land, allow the building of these structures without permission? What security precautions have you taken to ensure the outcrop doesn't split and fall while you are under it, chopping out the supporting rocks?
Why no details about you making use of land that is not yours? Most National Parks have regulations concerning illegal builds. Why don't you make a video about your steps to comply with their regulations? Most Rescue Teams/Organisations build bothies in case of weather changes, injury, or darkness. Free to use, and with planning permission. If one of your builds collapses, are you liable for the deaths/injuries? Will you come forward and take the results? Are your bothies marked on maps? Not your maps, but maps available from the authorised cartographers?
