    Thank you for this video - we get 40lbs roasted from Hatch each year and I generally dehydrate in several batch's, send the flakes to family back home in each box and use those flakes in my cooking and baking. This year, I think I will try a couple of jars canned along with the dehydrated batch.

    I lived in Hatch for many of my younger years. I live green chile. Thanks for your video. I water bathed my chiles.

    They sell NM Hatch chile here up and down certain streets here and roast it right there for you. We usually get the extra or Extra Extra hot. We buy some Dynamite sometimes.The smell of the roasted chiles is sooooo good! 😊

    Just to clarify, Hatch chile is NOT a variety, it is any variety of chiles grown in the Hatch valley. Dozens of varieties with very different heat levels are grown there. And it's chiles, not chilis. Chili is a meat stew made with chiles. Just want to set the record straight. Glad to find this video, I'm expecting my pressure canner to arrive in the next week or so and it's chile season now here in southern NM (I'm 40 miles from Hatch), and the chile roasters are outside every grocery store, so roasted green chile is definitely on my canning radar once that canner arrives!

      I grew my own this year they are very good but I still love the hatch chilies

    Hi I am from Albuquerque NM, It is our green Chile season and I always get 2 sacks roasted, I peel it, chop and can it every year. Saves so much room in my freezer and it’s so convenient to just pop my jar open.

    My friend went to new Mexico and picked me up 25 lbs of roasted, cleaned, and diced mild green chilies. I'll be canning those up this weekend. They were in Frozen 5 lb bags for $27 for all 25 lb

    Wish we had access to Hatch chilis. I love adding chilis to so many dishes. I love my ForJars lids. Time to stock up on some more. I am so disappointed in Ball now. I dont have time for failures after all the time spent. I bought some Orchard Road lids. They buckle in even short water bath canning sessions. Why produce a product that doesn’t work? Doesn’t make sense since no-one will buy them again.

    Hubby just bought another 25 lbs of hatch chiles today for .99 a pound. Roasted today will can tomorrow.

    My father went to the same farm 30+ years in Hatch, NM and now my sons travel from Phoenix to the farm for chilis. I am a new canner and was thinking of adding chicken bullion for flavor. Any thoughts? Thank you!

    Can 50 lbs hatch chilies every year. This year I freeze dried them. Can’t wait to use them

    I have canned NM chile but find they eat mushy. How do you keep them from turning mushy with the added water and additional cooking?

    Linda, i canned my chilies and they came out very mushy.... are they supposed to be that way. Like to see you open a jar of yours. Never mind, just watched one of your recipes and mine look just like yours. Thanks for all your videos.

    I can't find hatch peppers in my area. Are they hotter than jalapeños?

      No not hot but some are. If you ever had a chili relleno at mex rest its made from that. Good flavor

      No they’re not.. they do have mild, medium and hot. And hot can be pretty hot. I don’t think they are as hot as an jalapeño though.

    Great video. But please remind people you still have to add extra minutes depending on your elevation. In my area per my elevation I have to add 5 minutes to both water bath and pressure canning. Most people forget to add the elevation information to their canning videos. It's really important.

    I made the tomato juice with hatch chilis and oh my 😱 so tasty. I’ll be doing that yearly for sure. Have to go back and get more peppers especially hot, they were out when I was there-only mild

    Silly question. I’m at less than 1000 ft is it still 35 min? Or just look up chili peppers? I’m new to pressure canning. Appreciate it

      Your altitude determines the pressure you need to can at - 10 or 15 lbs. For water bath canning, your altitude can determine a different processing time. Your best bet is to confirm the proper pressure (pressure canning) or time (water bath canning) for your altitude. Hope that makes sense ☺️
