Those are gorgeous fish. I don't understand the reason for scaling fish that you plan to skin. Is there one, or is it just a matter of "this is how we've always done it"?
Watching how you fish I am not surprised your reel broke. When you hook a fish, lift your rod up and then wind the reel as you bring the rod down. Lift up - wind down - repeat. Then the rod is doing the work, not the reel.
Sometimes it seems the bail spring is broken but the bail itself is bent. Remove the fixing screw and see if it is out of shape. Both ends should go to their homes without fighting you. You can bend it back to the correct location.
