This native speaker uses "I'm fine thank you, and you?" daily at work and out shopping, etc, My children use it when speaking to their elders. Of course it's fabulous to learn new options, but know that yes, people still do say this phrase!
It's also important to know how to respond to greetings beginning with "what" such as "What's up?" or "What's goin on?" to which the typical answer is "Not much" or "Nothing" or no answer at all, just another greeting in return.
Nathan, that hits home.. When I first came to US.. I used to answer more formally and as you said, many times, people are not actually looking for an answer. Initially, I thought people are rude and impolite. Then it took me time to understand the cultural difference from where I came from and I embraced it eventually.. Sometimes I just answer to the "how are you" question like "Hey, what's up", or just "hey, good" and if they are a co-worker and the question is in the morning then I would answer "sleepy!" because I usually grumpy in the morning lol!

Buena sugerencia. Eso mismo sucede en el español. Si un empleado del banco te saluda y te pregunta "¿cómo estás?" basta con decir "bien" e ir directo a tu consulta o motivo por el cual estas ahí. No necesitas decir "estoy bien, y usted ¿como está? " 😄 Pero si es una amiga, puedes extenderte en tu respuesta y también devolver la pregunta de cómo está ella.

Yes, you can totally say that! However you shouldnt expect a big reply. Most likely they will say, "doing well, thanks!" And that is a completely normal response!

First of of all i can tell you are American. So you have to point it out because we all know Americans speak American English. As someone who was born in a former British colony and we use British English in every formal communication and document i still don't speak American English living now in the USA. How are you... I'm good is all i hear now in USA. I don't have a problem with it i just consider it to be typical Americanized English. A lot of contractions can be observed between Brit/American English. For anyone learning English make sure you decide if it's American English or British English you are leaning to. Someone on a different platform pointed out that responding with I'm good could also mean your behaviour. Maybe you were behaving bad but now you are good . Americans love to shorten words and i see the problem is becoming a negative influence online when i read comments. The English is butchered with awful short spellings . That's the reason i refuse to speak nor write in American English.

In fact, I know of a restaurant that has told employees to not respond to that question, and quite literally, throw the food at the customers, and serve the next one, repeat.
"I'm good" is completely incorrect English. Saying "I'm good" is actually very arrogant because it does not denote your feeling, but it denotes your quality. "I'm well" is the phrase you are looking for.
You're 100% correct for formal written English but spoken English hardly ever lines up perfectly with "proper" written English. "I'm good" is what 99% of natives would say as a response, and all they really mean is "I'm fine". Language can't be set in stone because we're all human and make mistakes and those mistakes become the norm. So I'd suggest taking it with a grain of salt.

You may be 'well' or 'not very well', but you cannot be in a state of 'being good' or 'being bad'. Perhaps you should change your name here, from 'Teacher' to 'The Badger's Student'...just a thought.

The British will often say “Not too bad” instead, and then return the question
Or the most confusing is that “how ya doin” basically means hello in UK

You can´t use WELL with verb to be. It´s an adverb not an adjective
