  • Noah Galvin is a star of stage and screen. You may have seen him on Broadway in Dear Evan Hansen or Waitress, or maybe you know him from his stints on ABC's The Real O'Neals (where I was a writer for two seasons) or, his newest gig, The Good Doctor. In today's session, Noah talks all about cooking Thanksgiving in a closet in Vancouver, growing up on tour as Gavroche in Les Miz, and how he balances his love of food and cooking with his life as an actor. We also talk about time that he spent cooking with his father, how he navigates time in the kitchen with his boyfriend, actor Ben Platt, and why refrigerated chicken is a no-no in a grilled chicken salad.

    Cooking as a grounding resource rings so true for me. I learned at the same age as Noah at the local Junior High School. They had "boys chef" before Title IX integrated the Home Econ and Shop classes. It makes sense that Noah would focus on roasting a chicken but it would have been to expensive for 24 boys to learn to roast a chicken. We started with Kix Toffee with butter and sugar, made muffins, pie, and cakes. That was perfect for me b/c Mom never made desserts. I wish there was The Cooking Channel with Alton Brown and AmTK back in those days. All I had was The Galloping Gourmet, The French Chef, and The Frugal Gourmet.

    There's a burger place in SF Bay Area called THE COUNTER that has build-your-own burgers and freshly grilled chicken on greens. Also I think their french fries are cooked in animal fat because they're the most fabulous fries I've ever had. If and when you're in the area, you should check them out.

    I was wondering who cooked between Noah and Ben given Ben said he just learned to make sweet potatoes and something else in an early interview. Given Noah's background, I can tell he's channeling an Inner Jewish Mother from a previous life. I hope that the cooking dynamic between Noah and Ben continues to grow and mature. It was shocking to read in my partner's postumus journal that cooking for me was one of his greatest fears.
    I wondered if Noah had to navigate the laws of Kashrut at some point, especially after talking about ham. But Ben's mom did all the hard stuff of setting up the Kosher kitchen with 2 sinks, fridges, and all the separate dishes and utensils. All Noah had to do is learn their system and the rules. I can't imagine making that lasagne in her kitchen b/c it mixes meat and dairy. Or making something with peas or green beans for Passover (a shonda!).

    I gave up wheat 2 years ago and listening to this, I got nostalgic for Noah's bagel order. I find most gluten-free pizza to be an abomination while Trader Joe's gluten-free everything bagel is tolerable if toasted (because they're never fresh). Thoughts from both of you?

    I'm wondering if he tasted Red Beans and Rice anytime when he was in NOLA. It's not your Mother's can of Campbell's Pork and Beans. Would he every try making it with Ben?
