The three high notes would be different, but everything else would be the same. Probably would be pretty easy to figure out. I find the bouzouki tough because oh how big the frets are, mandolin is so much easier for picking out melodies. Zouk is great for playing drone chords though.
would it be possible to tab a piano song such as Ray Charles? I haven't played long so I don't really know much about certain things, just self teaching myself

It was built by Tom Ellis in Austin TX. That said, a good setup from a well respected repair persons can help get rid of that unwelcome E string sound you are describing.
