  • Fathers day is this coming and we all know that there is nothing that makes dad happier than a reverse seared, medium-rare steak cooked to perfection and that is what we are going to do today. We will run an experiment to learn what would be the best way to cook a steak using the reverse sear. Oven cooked steak to perfection vs sous vide steak. What you think would win?

    I reverse sear in the oven at 200° and it always comes out amazing. I've been experimenting with dry brining,but have not perfected the timing yet. Great video as usual Ninja!

    I use both methods, too. I prefer reverse sear on my BGE, then followed by oven method . . . But if I want more time or have other tricky things, will do sous vide. I don’t rest sous vide, as the fluids distribute during cooking (for me) and will serve right out of the pan. Great video!!

    Great video Ninja. Also, loved the music in the background. I did notice one of the steaks had more marbling than the other and for me I’ve always felt sous vide made a steak more tender. But then I like to throw it on the grill to get that charcoal flavor.     Low smoke > Oven > Sous Vide in my experience. You have a lot of interesting gadgets. Didn't know there's thermometer /w apps these days.

    Ninja.... I just reverse seared a picanha. You down played how much a treat it really is!!! I did it as a whole roast, not South American/ Cuban style. I imagine how I did it, was just as tasty!! I have to thank you for making me want to grill and try these methods that you are showing us

    Reverse Sear in the oven with a probe thermometer = perfect steak every time. I put the temp at 220F and let it come up 10-15 degrees below where I want it, then sear it in butter and garlic. It's amazing.

      hello! I am looking to buy the probe thermometer. can you explain why you don't put the temp ar 205-210 instead of 220 if you plan to remove it 10-15 degrees below 220? and do you remove it directly after you take it out of oven and then onto searing in the pan? thank you!!

    On a side note I’m surprised you don’t do the usual 80 degree flip in the oven before bringing the steak up to temp which is usually done to at least 115 some go as high as 130 degrees but that’s way too much for my own tastes.

    There are so many ways to cook a great steak. No way is truly wrong. I prefer charcoal with some wood chips to sear the steak. Some about that wood fired flavor to the crust just takes it to another level for me. But I do love cast iron or carbon steel searing too, since you get to baste the steak.

    Should the pan be ready prior to pulling from oven or resting for 5 mins is what you do ? I can’t wait to try this. Wouks you add more time on the pan if cooking 2 steaks ?

    I see what you did there 😂 gas grill ✋. My last reverse sear was in a small $25 toaster oven and then cast iron sear, turned out amazing. Before that I used my gas grill for reverse sear in indirect heat, that was something else, grill reverse sear is just out of this world.

    That looks seriously delicious. I'll very curious what is this store where you can find 1.5" packaged steaks! All I find is maybe half inch thick 😂

      Oh no, you can get that size steaks every where like, costco, walmart and even publix. I got those from my local butcher but those stores sell it too, if you dont see it you can also ask for it! that is just the perfect thickness for an steak! 😀😀

    Fantastic lesson in reverse searing! I will stick to doing it in the oven as opposed to sous vide....just seems like sous vide is a lot more work😜😀

    I was expecting the meat to be way more cooked after letting it sear for 3 whole minutes on each side. when i sear in cast iron after sous vide (135) i only do MAYBE one minute on each side ... trying to keep that sear thin. but i don't get to do all that butter basting like you do. -- what approximate temperature (low-mid-high ranges) do you heat the cast iron to?

      You would want to initially have screaming hot. Before butter, you would need it to lower temp so the butter doesn't burn.

    Can you maybe explain why internal temp target for the oven was 100 degrees and for sous vide 130?

      That is because the steak in the oven tends to dry out. If you leave it there too long it'll start cooking the insides and it wont be as pink as beautiful! 😀

      That will be the oil you are using. try using avocado oil or regular olive oil, not the virgin one. 😀

      I use avocado oil. It helps a lot. Don’t be afraid to add a little extra to the pan. Also when you flip, if you have the heat all the way up you may want to turn it down some when you add the butter so it doesn’t burn. Thankfully I have a vent I turn on to catch it all.

    It occurred to me while watching the video, that when you want a steak, you have to make a choice: #A) A rich buttery steak or #B) A nice charcoal flavoring with your steak 🤔
    I know, you can put a piece of butter on your steak at the end of the grill time, but it’s not quite the same as being able to baste it w/butter in a cast iron pan. Hmmm, decisions, decisions?
    How can you get the best of both worlds, in one steak Ninjas?

      @@SaltyTales The only thing I’ve done so far is just put a pat of salted butter on the steak for the last minute of grilling, and then another while resting the steak for 10 minutes or so. If I forget this step, MAN! I get an earful from Ms Visious! 😖

      Make fire using dry dry firewood and charcoal, get your cast iron pan hot, and cook a stake inside the pan while also basting it

    Isn’t 100 degrees too low to take out from the oven? By the time you sear the steak, it’ll hit like 115 at most.

    Maybe you can try a steak experiment using Convectional ovens i.e Turbo Ovens hahahahaa
