I would say that they are different varieties, Causses de Vers ripens in a different way color wise, it has a black blueish color when properly ripen.Sultane is a bigger fig and during the ripening cycle it changes from brown burgundy to a black opaque color .I have Sultane, which I'm been using as rootstock for other grafted varieties, but I will see if there are any branches grown besides the grafts, so I let it fruit next season.

@@FigCzar Agreed. My Sultane has yet to get very blue. The inside is identical though. If you look at Baud's book, Sultane has bluish skin.
