Hey Shivesh, little correction.. Gujaratis never have a combination of sev tomatoes sabji and dal. We normally eat sev tomatoes in dinner and dal in lunch. It doesn’t look authentic gujarati style.

I'm from kathiyawad and we don't add ratlami sev. Normal sev is used and we use garlic chutney instead of normal chilli powder. In our house, we prepare garlic chutney for a month without adding water to it. We peel 7 to 10 garlic poads. Add that peeled cloves in mortar and pestle with some good amount of salt. Make paste of it and the we add chilli powder and oil for preservation. We keep this in an airtight jar for a month. If you need liquid garlic chutney to eat with dhokla we take out spoonful garlic chutney from the jar and make it liquid by adding water.
Kathol means pulses in English There are so many subjis made in Gujarat from kathol such as mung chana math piece etc And usually in gujarat weekly one day they make kathol especially on Thursday

Also try karhiyawadi thali! Lapsi sheero basundi kheer penda for sweets! Khaman idada dhokla wati dal na khaman all known by gujaratis as dhokla! N undhiyu and matla undhiyu of course! Kheechdo! And our waghareli kheechdi with kadhi in fact Gujaratis do kadhi with every sabji possible! Even bhindi kadhi ! 😬

Bro must try Dahi Oro from Kathiyawad with Bajre ka rotla. Take Amul masti dahi which is thick and not sour. Whisk it well. Add some salt and black salt, Add nicely chopped or crushed ginger chillies, Add chopped Coriander, Pinch of roasted cumin powder and Coriander powder, mix well and keep it in fridge. Now get some green baigan for bharta, roast them and peel them, use knife and do khat khat khat in smallest pieces you can cut. Let the bharta cool down then add it to the prepared dahi. Now in tadka pan add finely chopped garlic n chilli powder for red color. Add this tadka on the dahi oro(bharta). Enjoy with rotla topped with desi white makkhan.

We gujjus mostly use jaggery instead of brown sugar in dahl. And ratlami sev in sev tameta
