Whole garlic 1
White vinegar 1 cup
Salt 3 tsp
Marinate:
Yogurt 1kg
Lemons 4 (keep the skins)
Chaat masala 2.5 tbsp
Salt 3 tsp
Chilli flakes 4tsp
Chilli powder 2.5tsp
Garam masala 1.5tsp
Cumin 2tsp
Corriander powder 2tsp
Turmeric 1tsp
Orange food colour
Tomatoes ketchup (optional)
Topping :
Sesame seeds
Chilli flakes
5 whole green chillies
2 lemons
Make cuts on chicken joints
Put crushed garlic in 1 cup water (10min)
Sieve the garlic water onto chicken
Add 1 cup white vinegar add 3tsp salt. Soak 20min or till chicken turns white.
Wash the chicken x5
Fry chicken in oil for around 5min high heat.
Whisk yogurt till no lumps are left. Add the marinate masalai.
Dip the chicken in the marinate. Allow to sit in marinate for hr or more. (Keep half the marinate)
Add water to steam pot
Add lemon skins
Add whole garama masalai (cumain,black pepper, cinnamon, bay leaves) 1tbsp
Add cardamoms.
Add greaseproof pappers to bottom of the steamer. So the chicken don't soak up water. And cover the chicken with greaseproof pepper too.
The other half marinate add a little water and make it thin.
Re dip the chicken in the watered down marinate.
Mix chilli flakes & sesame seeds.
Place dipped chicken into steamer and sprinkle with chilli flake mix. Add whole green chillies &lemons into pot.
Steam first 5min on high.
Then Low heat 25min

Aisee kia rocket science hai . Bhai lots of chefs used yoghurt before . He used the method differently. So yes he’s good in using same old ingredients but with a twist of steam and frying . Very nice 👍

I don't know how to say enough "thank you" because I steamed it today and all guests went wild crazy and asked me to cook it next week also. They enjoyed it a lot. Thanks for the recipe... I am a homechef from India. I used your recipe as a base for making steam roasted quails. Came out nice. I did some tinkering with the recipe, but the significant change that I incorporated was to do with how I treated the leftover Marinade. The leftover Marinade was reduced and used as sauce to be served with the birds. I took some of the oil (from frying the birds) and added some chopped garlic and then poured the remaining Marinade and let it reduce. Towards the end I added some onion quarters and let it reduce further. I also added some sugar to temper the sourness in the sauce. Came out nice. Infact I used the sauce to savour the quails alongwith some stuffed kulche.

This was fantastic. The combination of quick fry and steam in parchment paper (had a small steamer only, cut quantities in half) worked perfectly. Fully flavored wonderous moisty chicken, wow, opened a world of possibilities. Don't be shy with the spices as the curd balances it all. Timing is of relevance so as to not over-steam the chicken. Wish we had subtitles :-) Thank you Kun Foods !

Chicken tikka is different, that is BBq not steam.
