Even if you spend months working on live environment with Azure AD there are some settings you will never need (depends on your setup ofc). All written exams need you to fully understand all components of the subject so solving example tests is essential. Make a question bank for your self and go for them at leas 4-5 times. When you do that you'll not just pass the test but you'll learn great deal of things about the system.

Hi, I'm also studying for this certification and having some trouble with the hands-on lab. I considered using Cloud Academy since they offer labs, but their labs were under maintenance due to Microsoft disabling M365 dev account registrations. Their suggestion is to either use your own M365 account or try the labs in read-only mode.
If possible, you could sign up for an Entra ID P2 trial (to access PIM features) and a Microsoft 365 E5 trial. Both trials last 30 days and can be renewed once, but after that, it's hard to create new trial accounts with the same information.
I spoke with Microsoft sales, and they offered Entra ID P2 for $12/month per user, and 15 Microsoft 365 E5+EMS licenses for about $22/month each, which totals around $345/month. If that works for you, great! you could also reduce the number of E5 licenses. Unfortunately, it's not an option for me right now. If anyone knows a free or more affordable solution, I'd love to hear it!
As I am studying cloud right now. Just going to give my MD 102. My teacher told me we'll give MS102 and SC 300 together because it goes with both. Also, he told us to use the simulator.
MD 102 was a part of previous M365 admin certification ( MS 100 + MS 101 ) but then they removed it and brought MS 102. But yeah these three certs will cover everything there is to M365 for sure.

how long from start to finsh did it take you to learn sc-300? how many hours a day for how long was sufficient to get through your resources?
do you take notes or simply commit to memory by watching?
Good question. So, it took me 2 months from the day I saw this exam on Microsoft's website to passing it. I would usually study for an hour on weekdays and then practice some of the concepts with labs during weekends( 1-2 hours ). I took very little notes( approx. 1-2 MS word pages ) for some of the terminologies and some factual data to prepare for the exam questions.
* I already had some experience with azure active directory. So the amount of time it would take you to go though all the material really depends on where you are at in your IT journey.
** I was not studying everyday ( 4-5 days a week on average ).

how do you find jobs after the certification any idea or suggestions
This particular cert is an odd one as it alone will not get a job like MS-102 or MS-100+MS101 or AZ-104 & AZ-140 will. SC-300 helps you learn AzureAD, now called EntraID, stuff which is a part of both M365 and Azure and jobs related to them.
are you working based on this certifications?
Yes, I work on M365 and Azure VDI projects and this certification helps a lot with the Entra ID side of things.
