East Texas is a gem. I feel like it’s the better part of the state with all of the trees and lakes. The Hill Country has views but it’s over priced now and to many people.
I agree! When people think of Texas, it's the Hill Country. While beautiful, I find East Texas more visually different with all the trees and lakes like Caddo Lake. @@WillEdmond

I'm not actually vegan but I have a bunch of food intolerances so, when I go out to eat, I look for gluten free vegan dishes to keep things simple. I find vegans really get the struggle! I avoid international flights, cruises and long train trips because I don't trust them to actually be able to feed me. I'm still skeptical but I love that you were able to actually eat something on the train ride! I'm only 8 minutes in so maybe you'll dive into the train food more later, but I have to ask, did you have to order a "special meal" ahead of time with the train like you would for an international flight? Or were the vegan options listed on the menu for everyone?
I’m so glad you watched. We didn’t have to order a special meal they have the vegan options labeled in the meal and if you want something else and if they have the supplies they’ll make it for you. They had quite a few options and I was surprised!
