i'd say it's a good thing that she appears on this show so people can watch and criticise her behaviours and/or work ethic. i agree with the chef in white that instead of stopping the employee to nag at them (it's such a waste of time when the kitchen is already hectic with orders), she could help to finish the order first. her strictness is a bit unnecessary imo. for instance, putting away the ingredients immediately bc the station is messy. i'm sure the employees know about that obviously... they simply don't have time when they're focusing on finishing the order first. besides, their station isn't unhygienic. overall, i feel like she can improve a bit as a boss

So relatable as a chef 🤣 but personally, they're so right. A good boss scolds you after the rush or while they're fixing your mistake themselves. They definitely don't have time to stop them in the kitchen to nag though as someone who often expo's my line I can understand the frustration of your chefs doing something wrong when they make almost the same thing every day 😅

This striggered me so much. I have to deal with very strict professors who have the worst thing to say about your every move. Its so suffocating being in the receiving end. Its not hard for one to develop anxiety disorders in this kind of environment

Totally agree with you. Professors are hard to deal with if they are very strict. I have anxiety now. Just the way she nags seemed so alike it brings back those memories.

She’s not the only one lol. There are tons of chef are even worst than her. Esp Italian and French are even harsher. They normally ask them to leave and throw the food at their face and clothes.
This boss is really good honestly because she teaches and discipline them . Others they dont even have time teach them, they will blame them.

I agree for her being strict butbin moderation, she could have help them first finish the work cause its already hectic but instead of doing that she keeps on nagging, it is already hard for the workers but shes making it harder more, I will not be surprised if those worker will quit because of her

I have worked for years in Michelin star restaurants and if I see that preparatory work still needs to be done during the service, then the service is not going well and it keeps repeating itself, everything stands and falls with the preparation of the ingredients for the dishes as chef is most important that this is taken care of once that is in order then you know that the service is going smoothly as a head chef it is your job to show them how to work efficiently , cleanly and in the correct way . as a chef you only have to dress the plates during the service. her management is all wrong . the way she runs her kitchen is out of date. it's positive that she sees how her behavior is so she can learn from it, they say the most important thing is that the customers are satisfied but in my opinion your staff is more important. if they are happy they will work better and the customers will automatically be satisfied too.

    1. She should help them instead of stopping their tasks to nag at them and tell them to do other tasks
    2. If she notices something that doesn't need immediate attention (not putting away the ingredients immediately, etc.), she shouldn't nag at them while working, it just puts so much pressure on them and makes the kitchen work more hectic and the atmosphere bad. She could just take note of it and then fix it after work.
    3. Her strictness is almost always out of line. She nags at them for every little thing. It also doesn't hurt to be a bit softer when speaking.
    4. She should stop holding grudges and taking everything personally. I don't need to explain this, just be kind but strict.
    5. Doesn't she realize that the reason a lot of her employees continue messing up is that she keeps nagging at them every minute and pressures them so much?

Her objective and goal to be this strict is correct. The kitchen is a fast paced and hectic work place. If you lose focus for just a mere second, you can chop your finger, put in wrong measurements, drop the food and all kinds of horrible things. The kitchen isn’t a place for daydreaming.
That she nags all the time is honestly something that should happen, so you keep your workers focused. The way she’s doing it is a different story however. In a fast paced environment, there is no place for ambiguous and rhetorical questions. Be straight to the point and tell them what they did wrong and what they should be doing instead. If they can’t manage, help them. A chef is as good as his/her team. The more well oiled and in sync people are, therefore well trained, the less a chef actually has to do during service. The chef usually just calls out what each member of the kitchen has to make and some times helps putting the exact amount of ingredients that are used for the wok in Chinese restaurants specifically. The chef is there to oversee each dish coming out of the kitchen.
I’m assuming her team is relatively new due to her needing to step in a lot of the times. So that might also be a reason why she comes off like this.

I know some or maybe most of you would not understand me but as someone who worked in the hospitality industry for years, that strict behavior of the head chef is NECESSARY.
In restaurants and hotels, we don’t use small pots like at home. We cook using pots that goes as high as your abdomen. Now, imagine boiling something in that big pot and your day dreaming about other things and not focused? Then suddenly that pot fell to a person? There are A LOT of fatal injuries happening in the kitchen so it is not the place to be lovey-dovey and baby your staff.
Working in the kitchen in the hospitality industry is like being in a military. Everything is fast paced and it needs to be because people are paying a huge amount of their hard earned money to eat at your resto or hotel, would you make them wait?
However, I agree that she should have started cooking than playing psychological games with her staff or just be straight to the point. At the end of the day, this head chef is responsible not only for the quality of the food but most importantly the safety of their staff and that’s why hate them or love them, being extremely strict is necessary.
I also had my experience with these type of leaders and at first I hated it but as years go by and you mature as a person and as a team member you will realize why they did what they did.

But daydreaming isn’t the only distraction that can lead to accidents and mistakes right? Being too on edge, rising blood pressure, and in a temper can also keep them from concentrating well…

I can't work with this kind of always negativity instead of cheering up her staffs to positivity encouragement is needed , they will not focus on their work if their boss is like that....
In feng shui i believe if the environment is full of noisy, yelling ,business can't receive good energy to success....
Careful also of staff mental health....simple ,be nice and teamwork with respect and trust ...good harmony...in the kitchen because angry staff while preparing food is not good...the TASTE of the food is bad...

This is a terrible boss. A demanding or a strict boss is fine as long as they are professional and fair. That’s not the problem here. She is controlling. There is a fine line. She crosses it constantly.
Look at the people she chooses to work in the kitchen. That tells you all you need to know. They are essentially all nice, timid, introverted people. People she can easily control. Watch the most recent episode where she chooses a new worker. That’ll tell you exactly what I mean. This has nothing to do with developing people, skill sets, or running a good kitchen. It has to do with who can I select that I can easily control.

If I were in her shoes I would be more polite but same level of strictness, cuz a responsibility of a leader is heavy than her team mates, the pressure in her makes her angry, she is scared than anyone of them might get hurt. She has her own story, it's better one of those chefs talk to the head chef and ask whether she is alright?

  • @Mour_As_In_More
    @Mour_As_In_More ปีที่แล้ว +1

I understand what she's doing but she's doing it the wrong way. She wants to criticize to help improve them and make them better but it comes of a fear not motivation. She has to be able to bounce around and help who needs help and also during the rush theres no time to nag at them otherwise she'll just disrupt the flow of everything and cause even more mistake. A leader is only as good as his/her crew without them your left with nothing, they should be able to see you as someone to look up too when things starts to go wrong but since they're so afraid or rather annoyed by her they don't bother to ask any question and just hope for the best.

I think this is a real working boss instead of a fun working boss like Boss Yang. I love his segments because they're fun but at the end of the day the gym functions on its own except for PT. This is a kitchen, it's time constrained, as every dish going out has to be cooked, tasty and on time to the customer. If the rhythm is lost, then the service is a mess. This is reality

@@retricallltann6243 True, she can take this as a learning experience. But in my view, those hosts are not of the culinary world, in the first episode of airing her I think they pushed whatever drama they could prod since it's their job. Surely, we can also criticise their behavior, being antagonising and all that, as well. If they can make snide comments as their job entails, she can scold her chefs for honestly making mistakes chefs shouldn't be making. Cutting a whole carrot, without peeling it, to be either stir fried or used as stock? There's no way to use it, it would be a waste of time to peel those slices, that carrot is gone, wasted. That's rookie mistake. Another chef forgot a main component of the dish, even if another replacement is on, there is time for her to at least tell her chef that. Though in that particular scene, she should have just screamed where are the beans? Like Gordon going, where is the lamb sauce?

And as she said the kitchen is dangerous, I would get nervous provoking the temper of someone holding a knife. I agree she has to be strict, but the nagging was a bit too wordy that it gets tiresome even for me as viewer… she could have stated her point strictly but in the fewest words possible.
