So is nobody going to talk about how dark some of the Galaxy Battle endings are? Bardock and Fasha seriously plan to off themselves in several of them.
I wouldn't say off themselves. They're currently at war against friezas army so they fully expect to die fighting

I still remember that (Eighter Vs. Sixteen) fight; i lost so many times that I eventually was shouting at the screen. Finally, I spammed Eighter's final over and over and was sooo happy to "Eighter slap" sixteen into infinity.

How hard were some of these? Sometimes matchups are set with the intent of you losing- you’ll take much more damage more easily, like Kid Goku against 16 or Vegeta against Frieza after his father

The Saiyan population are very low compared to many others (only numbering in the thousands according to Toriyama) so females would be even more valuable. Alongside that, the scenario implies there aren't that many Saiyans who survived this point of the battle already.
