Correct with the water. If you do it correctly, you don’t need to water during germination after the initial soak and wetting the medium. Expect 10+ oz depending on how long you grow it.
Arkansas has a huge mold problem and high humidity, we grow great mushrooms, but they are not good for microgreens, wheat grass, and ginger bugs. how do you fix that?

We Never soil for our microgreens. Soil is extremely dirty and microgreens might grow in abundance from the nutrients, but at the cost of severe mold issues. Besides, do you want to be eating a crop that your not suppose to wash, in worm castings and dirt? Coco coir is just washed coconut husk. Extremely clean enough to eat (not that you would, gross!) So long shorty short, use coco coir, especially for crops susceptible to mold!
Pro-mix is a premium organic (yellow bag has a slight wetting agent) sphagnum peat moss/ coco coir/perlite mix with ground up limestone for pH and mycorrhizea. You could probably eat it. It has an expiration date. If you can find it tell me. But I have no problem with it. You can also use the bag as a grow bag out in your garden.
can you grow it without the medium? Also, I saw a youtube video where he incorporate 1 tbsp of bleach per gallon of water. Do you really have to do that?
The day we sow and put weight on us day 1 in our eyes ☺️ If we soak, I don’t typically soak overnight. If I do, I don’t count soak as a day. Just the day we actually Sow.

After cutting your grass, can you continue to grow form the same batch? Or, is it one and done?

Soaking my first batch of wheat grass today 😅 we use Talborne Organics leafy greens, 1ml/ lt. Kelpak also worked well in the past for us.

My wheatgrass took 14 days to grow 3 inch. Spring wheatgrass and Im very far from mold its always super dry even though I water twice a day.

Get a de-humidifier for the space you're planning on growing your Microgreens

Wheatgrass shouldn't be a problem growing near a window so-long there is proper sunlight! Let us know how you make out.
absolutely you can... I do it right now in the window and it grows wonderfully... you don't need direct sun... any window will work IME

Check the Tap Water in your community ... ours has Chorline... Which will indeed determine the health of what you are trying to grow.
