Sooo Amazing to see you open thies old wines!! I am lucky my local wine dealer have some old bottles from 1965-1990, so from time to time I try some of them out myself too, since I love older wines, sometimes they work sometimes they dont haha. But must be amazing to have so many interresting old wines, all that history in a bottle is amazing. By the way keep up your amazing work!

Great stuff again! Q: I recently bought a 1967 Chateau Coutet myself and noticed the foil and cork were moldy so I decided to clean it. While wiping the cork very lightly, it accidentally fell into the bottle. I managed to grab the cork and reseal the bottle quickly with a Durand within 5min. Would you say I could still store it in the cellar for another year; I had a special dinner in mind?
@@DCTVchannel due to the amount of RS it has, you can wait a little, but if oxygen has been let in, I would recommend drinking it in the next 5 months or so. It won't turn due to the RS, but the quality will deteriorate
how long you've been sommelier? also is this the correct term? I apologize if being mistaken. also, why do you use black and bone napkins? are they for different purposes? how do you wash the napkins? as far as I know, wine is wild for clothing omg I have so manu questions, thanks!!!!!1!
If you are looking to open older bottles of wine, those types of openers (Ah-so cork pullers) are more efficient. The one he has with the corkscrew helps with keeping most of the cork intact while the sides go along the cork to help pull as you twist the cork. This reduces the chances of breaking the cork immensely. I 100% recommend purchasing one if you're opening older bottles! Hope this helps!
I just bought one exactly for that reason: Combination of Ah-SO and Corkscrew is PERFECT for mature / very old bottles..Helps mitigate the risk of cork breaking. The original one is called The Durand from France for $145. The one he uses is a copy,, for $50 ! I went with the $50 one and it worked perfectly opening a 20 year old bottle earlier this week..

I always taste the wine from the test pour to make sure the quality is good before the guest receives it, but yes, often times the guest will also offer me a taste.
Given that he could easily afford a real one, I presume that he likes his engraved Amazon version. Some of the fakes have terrible fit and finish, compared to a real Durand, but if this version is good enough for him then it likely doesn’t have those drawbacks.
This channel inspired me to buy his exact Amazon one I got it yesterday and used it to open a 17$ bottle of Pinot noir that was on sale at my local grocery store. I was pretending it was something much finer. Lol
The markups are like that because of the availability and also for the fact that they have NO idea how long they will be holding any specific bottle. Granted. 2600 is quite extravagant, at this point you're buying the bottle. The service. The mark up and the environment. Personally, I ain't paying more than 50$ for a bottle of wine. I'm also not even considered middle class. 🤷♂️
My mum was born in 1947 and died two years ago. Strange to realize that this wine got older…. ❤

In these cases, where the cork is so moldy, wouldent be wise to use some port tongs? Do you ever use those at your resturant?
@@Hrothnar I have them and have used them, but it takes a lot of perpetration which I would only use on really old bottles, like mid 1800s

Pullers are used for stoppers in bad condition. With a corkscrew only, the cork could break.
