I know that Stay Night's Gilgamesh's was a douchebag because he contacted the Grail's Mud, but I would love to see him a little more like this. PS: I'm totally shipping Gil and Hakunon!!
In the VN of the Fate route Saber describes him as someone who has gone insane compared to their last encounter (Zero). I know the Grail Mud didn't corrupted him like Saber in Heaven's Feel to to his *HUGE* ego, but I think it had some kind of influence on him, but your statement is also true.
From what I could read, both of these were true. Gil's attitude is coming both from the fact that the grail ended up multiplying his bad feelings and emotions (And especially, his disdain for "mongrels" and such lower people), but also because of the fact that people he could see in Fuyuki and all around the world were basically worthless compared to the humans he knew back in Uruk (If you know/play FGO or watched the Babylonia anime, you can have glimpses of the Uruk people there). As such, he saw nothing worth fighting for, and thus, had no reason at all to act in a good way. I may be wrong on some points tho because it's been a while since I read all of that stuff, but I hope to believe I'm mostly correct !
