    Welcome to Our Bong Kitchen! Today, we’re making a delightful and crispy snack - Aloo Khasta Kachori, the perfect treat for any occasion. This recipe is unique because it doesn't use onion or garlic, making it a great option for those who prefer or need to avoid these ingredients. Whether you're hosting a party or craving something savory, these golden, flaky kachoris filled with spiced potato stuffing will surely impress.
    In this recipe, we’ve omitted the onion and garlic to make it suitable for everyone. You’ll still experience all the flavors of a traditional kachori with a unique twist.
    Ingredients :
    For the Dough :
    1. 300 gram all purpose flour ( ৩০০ গ্রাম ময়দা )
    2. Salt to taste ( নুন স্বাদমতো )
    3. 1/2 teaspoon sugar ( ১/২ চা চামচ চিনি )
    4. 75 ml ghee or refined oil ( ৭৫ এম এল ঘি বা রিফাইন অয়েল )
    5. Water as per the requirement ( জল পরিমাণ মতো )
    For the filling :
    1. 5 medium size potatoes ( ৫ টি মাঝারি সাইজের আলু )
    2. 3 tablespoon refined oil ( ৩ টেবিল চামচ রিফাইন অয়েল )
    3. 3 chopped green chillies ( ৩ টি কাঁচা লঙ্কা কুচি )
    4. 1 inch chopped ginger ( ১ ইঞ্চি আদা কুচি )
    5. 1 teaspoon cumin powder ( ১ চা চামচ জিরে গুঁড়ো )
    6. 1.5 teaspoon coriander powder ( ১.৫ চা চামচ ধনে গুঁড়ো )
    7. 1.5 teaspoon kashmiri mirch powder ( ১.৫ চা চামচ কাশ্মীরি লঙ্কা গুঁড়ো )
    8. 1 teaspoon turmeric powder ( ১ চা চামচ হলুদ গুঁড়ো )
    9. Salt to taste ( নুন স্বাদমতো )
    10. 1 teaspoon sugar ( ১ চা চামচ চিনি )
    11. 1 teaspoon asafoetida ( ১ চা চামচ হিং )
    12. 1 teaspoon chat masala ( ১ চা চামচ চাট মশলা )
    13. 1/2 teaspoon garam masala ( ১/২ চা চামচ গরম মশলা )
    14. Fresh chopped coriander leaves ( টাটকা ধনে পাতা কুচি )
    How to Make Aloo Khasta Kachori:
    Step 1:
    Prepare the Dough :
    In a large mixing bowl, combine the all-purpose flour, sugar and salt. Add ghee or oil and rub it in with your fingers until the mixture resembles breadcrumbs. This helps create the flaky texture of the kachori. Add water to knead a smooth, firm dough. Cover the dough with a damp cloth or cling film and let it rest for 30 minutes.
    Step 2:
    Make the Filling :
    In a kadai, heat a little oil. Add the chopped green chillies and chopped ginger, and let them splutter. Add the cumin, coriander, Kashmiri mirch powder, turmeric powder, salt to taste, and sugar and asafoetida. Sauté for a minute until fragrant. Add the chopped potatoes and Mix well and close the lid and cook for a few minutes. Open the lid and stir it then add chat masala and garam masala and stir it again. Finish it with chopped coriander leaves. Now turn off the heat and let the mixture cool.
    Step 3:
    Shape the Kachoris :
    Divide the dough into small balls, then roll each ball into a small disc. Place a spoonful of the cooled potato filling in the center of each disc. Carefully seal the edges to form a round shape, pinching the sides together. Gently flatten the filled dough ball with your fingers to form a thick disk.
    Step 4:
    Fry the Kachoris :
    Heat oil in a deep frying pan over medium heat. Once hot, gently drop the kachoris into the oil. Fry them until they puff up and turn golden brown and crispy on all sides. Be sure to fry on low-medium heat to ensure the kachoris cook evenly.
    Step 5:
    Serve Once fried, remove the kachoris from the oil and drain excess oil on a paper towel. Serve these hot, crispy Aloo Khasta Kachoris with your favorite chutney or tamarind sauce.
