Hi! for sure you can make this completely vegetarian, by using soy sauce or mushroom soy sauce instead of fish sauce or shrimp paste. You can also replace the dried shrimp powder with mushroom seasoning. Hope this helps :D

The tip on why you wash the mango strips well taken - thanks!! but small question - why do you washed the chopped onions?
For salads, our shallots can be very strong and overpowering so we like to give it a light wash first before adding it.
