You could certainly cook sausage in an oven overnight. It would have to be at a very low temperature to do so. Smoking involves combusting wood so doing it outside is safer.
I don't know why you need this if the grinder can do the job. I had the mixer and this stuffer in my shopping cart on Amazon until I seen the grinder loading casings. I'll spend the extra money on the larger grinder.
I was thinking the same, but what about after you season your meat? I wouldn't feel comfortable passing it through the machine that ground it just to stuff it. I would much rather have a dedicated tool for the job, and this seems to be it.
I have a grinder and stuffer on my kitchen-aid, the grinder is awesome, but the stuffer is super hard to use. You need two people which when I am stuffing sausage, no one is around and you have to feed and stuff it down a tube. Lots of air pockets, the meat gets stuck on the plastic stuffing stick and it takes forever. I just ordered this LEM stuffer and its waiting to be used, I did see someone hooked up a cordless drill to it to make it turn instead of the handle. I will try that set at a low speed and see how it goes.
