*Arbi ke Patte ki Pakoda* or Indian colocasia leaf fritters is an age-old snack. People across Maharashtra and Gujarat enjoy it significantly. Large leaves are coated with spiced gram flour batter, rolled, and deep-fried for perfection. Here's a simple recipe for you:
Ingredients:
*Arbi (Colocasia) leaves* - 10-12 large leaves
*Besan (Gram flour)* - 1 cup
*Rice flour* - 2 tbsp (optional for extra crispiness)
*Turmeric Powder* - ½ tsp
*Red Chili Powder* - 1 tsp
*Coriander Powder* - 1 tsp
*Ajwain (Carom seeds)* - ½ tsp
*Asafoetida (Hing)* - a pinch
*Tamarind paste* - 2 tbsp (for the tanginess)
*Salt* - to taste
*Water* - as needed
*Oil* - for deep fry
Steps:.
Cut the large veins and stems so that the leaves are tender and soft.
2. *Preparation of Batter:*
Mix gram flour, rice flour, turmeric powder, red chili powder, coriander powder, ajwain, asafoetida, and salt in a bowl.
Add the tamarind paste to the batter.
Add water in small portions so the batter becomes lumpy, and then it will become thick and spreadable.
3. *Coat the Leaves:*
Take one leaf; place it face down, and apply a thin coat of the batter on the leaf;
On top of that, put another leaf and repeat the process (stack 3-4 leaves depending on their size).
Tightly roll them from one end to the other, like a cylinder.
Repeat with the remaining leaves.
4. *Steam the Rolls:*
Steam the rolled leaves in a steamer about 15-20 minutes or till they are firm.
Let them cool for few minutes before cutting into round slices.
5. Fry the Pakodas:
Fry oil in a deep pan.
Dip each of the slices of the roll again in the prepared batter; fry them until they turn golden brown and crisp.
6. Serve
It can be served hot with green chutney or tamarind chutney.
