Dave you are fully right!! But we are a machine manufacturing company and not a food laboratory. The room we use to test machines and produce the video is not suitable for food preparation and therefore we don't take care to HACCP rules or any other hygene standard. All the food processed is then not used for human feed. By the way, also the operator is not a real butcher but an engineer :-))) ;-) But thanks a lot for looking at our video and for the kind tips!!!!
It's important, during loading to press the meat a little bit as shown in the video so that, when the cylinder goes under pressure, it becomes to vent the air before the meat goes out.
