Spiced Millet Porridge Recipe - How to make Authentic Ghanaian Hausa KoKo I step by step guide

    INGREDIENTS FOR HAUSA KOKO DOUGH/ mixture:
    3 cups of millet, 8 cloves of whentia (AKA, grains of selim), 5 dried chilis (optional), 1/4 cup of chopped ginger, 1 teaspoon of cloves, 1/2 teaspoon of black pepper corns, 2000 ml of water.
    RECIPE:
    Wash millet throughly with lots of water, and soak with water overnight to soften for easy blending. Blend all above ingredients with water into a strainable mixture, and strain to remove roughage/chaff.
    Recommending a second re-blending of obtained chaff, with water, for the purpose of extracting as much millet meal as possible. Strain repeatedly till millet Hausa koko mixture is smooth and without roughage.
    Let millet Hausa koko mixture rest and ferment in 24 hrs. During this period, the millet Hausa koko meal will separate to bottom and have a straw colored liquid on top.
    To cook millet Hausa koko, gently pour straw colored liquid into cooking pot, and bring to a rolling boil, remove foam from surface of hot liquid, and remove pot from source of heat. Scoop 2 ladles full of solid millet meal into a separate bowl and add 2 more ladles full of remaining liquid from millet mixture and whisk together till smooth.
    Now, whisk this mixture into the hot liquid. It is crucial to pour the millet mixture into the pot of hot liquid and whisk simultaneously till desired silky smooth thickness is obtained. Best millet Hausa koko consistency is twice the thickness of heavy whipping cream.
    Last step is to cover the pot to trap the steam to continue cooking the Hausa koko while off source of heat for 10 more minutes.
    Ready to serve when the Hausa koko gets a glossy shine or sheen to its appearance. Add preferred sweetener and enjoy it!

    I'm from northern Ghana, and can tell you that you nailed it with your spices, and the preparation!
    Hausa koko is never cooked on direct fire like regular traditional white corn dough porridge is!
    This is the way I make it too, except I take the short cut by buying the already milled millet flour from the Indian Store, near my house here in Virginia. It saves time and work. You should have one in your town in AZ... you may want to check 'em out!
    I take personal umbrage when I see people inaccurately preparing dishes from northern Ghana and claiming it's "authentic" dishes from northern Ghana! 😁

      Also , Yvonne, I did find powdered millet from an Ethiopian grocery store and I agree it will be a lot less stressful to use for all millet recipes! Thank you 🙏🏿❤️❤️❤️

      Yvonne A oh yhhh she nailed it to the cross , sweat, I am amaze self , cause detailed it and broke it down to the lowest denominator it can get , got my mind twisted a bite , I had to look at her face and name again to make sure is nanaaba , and not aunty mamuna tricking me , this is Hausa koko as best as it could get .     My sis, I love Millet Porridge. As a matter of fact, Millet is staple food in my Country of origin(Uganda). I live in Canada(Toronto), and believe me there's plenty of Millet/Millet Flour in Sri Lankan and East Indian Stores. In Uganda, we make Millet Porridge with either Milk,Tamarind or with Lemon Flavored water. However, we use Finger Millet(Reddish of Brownish in Colour). The Millet you are using is Pearl Millet. To prepare Millet Porridge, simply Boil 2-3 cups water, add Milk or Lemon or Tamarind Flavoured water. In a separate Cup, mix Half a Cup of Millet powder in Cold water. Add mixture to Boiled water. Add Sugar, Honey if you like and Enjoy.😀
    Millet can also be used to make Millet Fufu. Simply add Millet Flour + Dry Cassava Flour. Make it same way like Ghanaian or Nigerian Fufu.
    In Southern India, Millet is called RAGI. In Sri Lanka, Millet is called KURAKAN. Thank you.

    Thanks madam!!! Reminds me of my childhood in Salaga, N. Ghana. My mouth is indeed watering and I can taste it. What I realised when I was last in Ghana is that the current crop of koko sellers don't make it as rich as it used to be for economic reasons. For example they no longer add "gudaji" which are little "balls" cooked together to be chewed in the koko. One of my favourite childhood ones is also the green more spicier type of koko called "kunun kanwa" normally prepared for a woman who has recently delivered a baby, it is believed to accelerate the production of milk for the new baby, among other benefits.Where I am domiciled in Scandinavia it is difficult to get these ingredients.

    Love these channels but makes me sad as an african american bcuz my ancestors foods, culture, traditions, and origin of who they were, were stripped away during time of slavery and thru each generation assimilated to european american western culture. So alot of meats n meals I see prepared I'm not used to eat or anything else and mostly the meats tbh I'm not open minded but I'm appreciative of the culture of west africans and being able to keep the foods ..cultures n traditions is something u guys are very fortunate to have!

    This is one of my favourite meals🤗. I had it, without fail, every Saturday for 14 years. My father never understood my obsession with it but he was always ready to drive me to the lady between 7:30-8:00am for my Hausa koko. And her koose was just 😋

      Ohh so the red millets works well. Do u mean any kind of millets is cool? I bought millet 2day and i got homd and found out is called finger millet and i checked google it look redish so i was worried i bought the wrong item. It is red when not blended but looks ash or grey in powder

Grand bassam is Fanty and N zema Town and around the coast is full of Nzema and Fanty .it is only the border which seperate us. Most people from Grd Bassam have relatives on the other side of the border. I have family in Takorady and Cape Coast.
