I try this again using your method. My first try was in the winter and I got way too much bad smoke using pellets. I don't remember how long I smoked, so thanks for the time frame. Didn't know about vacuum sealing for a couple of weeks. I think I will wait until fall because it is in the high 90s now.
Excellent video, Herr Captain! From personal experience, I can attest that your average BS grocery store block pepper jack makes amazing smoked cheese. Also, aged gouda. OMG. Smoked aged gouda. Transcendent. And you haven't lived until you've successfully smoked Cotswold cheese.
I love smoked cheese - anytime! That is on my list to do. Thanks for the how to - seems pretty easy. I hadn't thought about doing that during this heat but may give it a try.

As you know, I subbed quite a few months ago and I hit the bell to notify like everybody says and I've gotten nothing happened to see this in my inbox this morning! I'm curious about the egg. I am a lifetime griller. I am 66 years old now Weber kettles Have been my go to mostly have a Weber Q gas for convenience mostly for vegetables asparagus and such! I'm going to give you big thumbs up!
Well, thank you very much Sam! I have a few Weber kettles as well. They are great grills. I feel the BGE is a great all around as you can grill and smoke in it with ease.
Never been a fan of smoked cheese but this is a great video. Tina is brave wearing light yellow around the Egg and playing with charcoal. Messed up many a lighter colored shirt. I need one of those cast iron planchettes. Great job guys.
@@Tinacannoncooks you are the best, love the entire idea. May not use it for cheese but I could see this technique for fish. I am going to have to check FOGOs website for that cast iron for the XL.

It was literally 95° out the day that we filmed this. We just put up a tent over the Egg to shade it
Why not just both deflector plates and use the whole grill?
It is all explained why right in the video. Ease of adding/removing charcoal

I liked using the cast iron as a deflector. It worked great!

Great Video guys! I smoke mine with a pellet tube with pellet or wood chips and a pan of ice to keep the temp down. Again, awesome video!

Same premise. Simply replace cheese with salmon I would imagine. I have never done it but I will look into it
Now I have to wait till it is not a million degrees outside.
Oh, I hear that. It was actually about 95° when we shot this and about 90% humidity. S Florida is brutal!
