I browned my meatballs too. All the recipes I'm seeing are people just basically poaching them in the soup. I love the additional flavor from the browning & fond in the pot. I used ground chicken & also used panko instead of the wet breadcrumbs & the meatballs were Phenomenal 😊❤
Yeah they are just ok poached but I agree the fond is key! I've used every type of meat/ bird for this type of soup, they are all delicious as long as you add the ingredients for moisture as he did.

I really like your method of keeping the meatballs separate until serving, especially when making a huge pot of the veg broth. Definitely a no brainer with the pasta. This is why canned soup literally sucks hehehe. I’m on board with freezing the extra meatballs! Less cooking later. Brilliant and thank you!
*I'm a expat living in Colombia S/A I had a bit of fun with my Colombian wife at lunch time she prepared a meatball soup 99% similar to your recipe above with a bit of white rice since that pasta isn't sold where I live, now the fun part, she sadly told me that she wanted to prepare me a international soup but she didn't know how I chuckled and told her that meatball soup was actually a Italian wedding soup, needless to say she proudly smiled!* 😷👍🏻
GREAT tip to cook pasta separately and add to individual servings. The first time I attempted homemade soup (approx 100 yrs ago...🥴 I learned that adding the pasta to the soup was not the way to go. You end up w/goop instead of soup. I know I keep saying this but it’s true: you have THE best cooking channel on TH-cam. Wow, you just pack in so much in one segment. And I get a big kick out of the way you throw up your hands after a taste and walk off. Mic thrown down!

Never occurred to me to make the pieces individually! 🤦♀️🤷♀️ That's going to be helpful when I try this recipe. I always seem to cook more than I need! Can i use this technique for spaghetti? I always make to much, but we love leftover spaghetti. 👍👍
Always a good idea to cook your noodles separately in every soup. If you put that much pasta in soup, the pasta will absorb a lot of liquid. By the next day, your soup will just be a giant mass of wet pasta. Store them separately, and combine when you’re ready to eat. Soup looks great.
