What season should you begin planting? I got a squash last week (zone 8 in USA). It's early August. I've washed and dried the seeds, if it's not the best time to plant will they be okay until you recommend planting if I don't remove the outer hull?
I put the cover at the beginning. If the water in the container getting dry,you have to add some more. I will take off the cover when the sprouts are tall enough to transplant.
The appropriate period of harvest can be judged by the color of the fruit stem. When the fruit stem turns yellow-brown as the harvest index, the peel has white wax powder, and the non-green part of the peel changes from white to yellow-brown as an important feature of harvesting.

Breaking the shell is to make the pumpkin seeds sprout earlier.

I am not sure about zone 8. But you still can try it,since the temperature is much higher there.
