  • A sleepless night after watching a documentary about GMOs convinced Nicolas Rossignol to abandon conventional farming and seek a more holistic approach to winemaking. Viewed as pioneers in biodynamics in the Côte d’Or, he and his brother David produce pure and elegant Pinot Noir with as little intervention as possible.
    Brothers Nicolas and David took over in 1990 and converted to sustainable agriculture. The estate is certified organic and biodynamic. They believe if sustainable farming is good for the soil, it’s good for the vines. They produce complex, elegant wines that express the terroir.
    Domaine Rossignol-Trapet’s vineyards are some of Burgundy’s most impressive. Pinot Noir vines range from 25 to 80 years old and are planted in clay and limestone soil. The Rossignol brothers are champions of minimal intervention and use plant-based formulas to nourish and protect vines naturally. Grapes are harvested by hand, and each plot is vinified separately. Wines ferment with 5 to 7 weeks of maceration and are then aged in 30% new oak.
