  • In this video I smoke the smallest whole packer style brisket yet! I use hickory wood chunks and B&B charcoal briquettes for a long low and slow cook. I left the brisket untouched for the first four hours and started to spritz the brisket every two hours. I did not wrap the brisket and took it off the smoker when it was prob tender. Total cook time ten hours.

    I’m sure you know already but when it makes an indent ion on brisket like that you can put a chunk of smoking wood to prop it up. Saw Harry soo do it.

    Hey one question for you. If you would have wrapped it at some point during the cook do you think it would have been juicy? I just ordered a Bronco so I am new to this. I like Brisket and if I cook one it will have to be a smaller one like the one you did in this video. That’s why I ask. Thanks for the videos. Your one of the reasons I went with the Bronco.

      Thank you for watching and I am happy that my videos lead you to buying a Bronco. You're going to have a blast with it. You are correct. If I did wrap it, it gives the brisket a greater chance of being juicy. Towards the end of the cook. I decided not to as the internal temp was close to reaching over 200f and from their the probe test is done.
