We called them bodi pronounced (bow- dee)...the stems you are cutting off, just at the end were the bean is attached, I just twist the bean of it, I don't cut off that whole stem...those ends continue to flower and you continue to get more beans from them while the vine continues to spread!
Your biggest mistake was cutting the beans far up the stem, the reason for this, there will be more flower buds that will develop at the bifurcations. Good job with producing abundant harvest!

We call those noodle beans. I didnt grow any this year. You can do seed saving with them too.. just leave them to dry out on the runner.
