Yes, it can't be a 2005 car since the game is set in 1992, but I guess the game took some liberty and imagined that the car came out in 1992. I guess one of hte lead designers really liked the car which was brand new when it was in development and decided to include it. Some of the cars in this game look aesthetically different and out of place than others. It’s like they took their time designing with some, while others look kinda tossed together and cheap. The more curvy cars almost look like they were modded into the game compared to the more blocky, plastic-looking ones.
SA had so many cars and vehicles. They really overdid themselves with this one. 3 and VC were a bit similar, but SA really added a ton more im every aspect of the game

I am covering these GTA vs real life vehicles for a long time and the thing I noticed is that Rockstar often use real life concept vehicles as GTA universe cars.... one example I can think of top of my head is GTA V Riata which is based on ford broco concept by some website amd it looks very close to 2020 Bronco even though Riata is launched in GTA online in 2017 with doomsday heist update.... recently they used dodge Daytona EV concept as Buffalo EVX

The 2005 Ford GT is a carbon copy new edition of the 1966 Ford GT40, hence the existence of the Bullet can be explained away.
