I am careful not to over whip my cream in the first place, but I still have a problem when adding color that it wants to get to thick. I mostly use the brand "Rich's smooth n ice" cream.
U can easily achieve bright red by adding electric or hot pink, then add orange colour then lastly a little drop of red. Hot red whipped cream is ready..

Gorgeous red colur! But just wondering, with that amount of red colour, won't it stain the teeth? I had a similar issue earlier 😢
Will it be ok to leave whipped out overnight? Will it become runny? Do I need to refrgrate the cake once frosted?

does it have to be non dairy or can it be regular too?
You could use the same coloring technique for regular but it would just need to be stabilized before you could decorate with it.

Leave out the green then and maybe add just a little bit of yellow to brighten the color.
