Brother, I love Tekken 8 but I also want the new Dragon Ball that is coming out, I only have money to buy one, which one do you recommend in terms of fun and variety?

depends on what you define as fun.
FGs are like a sport; it's fun because you put effort, and that effort is rewarded. But you are going to suck the first few times. It rewards discipline, knowledge, and all the stuff that comes with it.
You can play it more casually, but Tekken 8 has an emphasis on online play. You have the story mode, arcade, and Tekken ball, besides character customization and the ghost battle. But they're things that point you towards online.
dbz will have a lot more content to make the single player as fun as it can be, while also having online. The focus is undeniably on single player. Their balance decisions will be based on the in universe character power, which means the online will be very unbalanced, but it doesn't mean it will be bad, just that it isn't meant for competitive players.
If you ask me which one is more fun, I will say Tekken, because I like what it offers. But to many of my friends, dbz would be the answer. Hope this gives you an idea about those games and help you choose.
tl, dr: Tekken if you like online, dbz if you like single player.
