The people in the video we're talking about are at a live concert. Even at live concerts the music goes through a mic and speakers, so they're hearing it slightly after McFerrin sings it. You notice sometimes if you stand a long way from a basketball court and watch someone bounce a ball, you hear the sound after you see the ball hit the ground. It's surprisingly hard to get a large audience to clap exactly on the beat for that reason.
I think it's genuinely impressive that they managed to keep not JUST off-beat but sporadically off-beat without once landing on the right pattern for the entirety of the song.
