Nice one. Foraging (and hunting) is one of the most liberating thing a city dweller can do. The only thing you really have to worry about are ticks. Use some DEET and tuck your trousers into you wellies. 👍

I am on meal replacement milkshakes because of stomach issues. I don’t eat solid food anymore and it’s ruining my life. Life without eating (it’s been months) totally makes life not worth living. Videos like this enable me to enjoy the food and experience it without making myself puke and feel awful all day. You will never understand how your cooking videos give me something to hold onto.
I too have issues with stomach, I was considering a liquid diet, Ensure or home made, Im not sure which one yet maybe both. I hope your issues clear as I do mine.. one day x
I've realized what contributes in large part to make your videos so watchable, it's your skill as a narrator and your ability to communicate your process to the viewers

Musings from a forester. The tree tubes serve a few purposes: 1. Prevents grazing at the pivotal stage of establishment. and 2. Helps to encourage the tree to grow straight up rather than spread out. In some places, tree tubes are being shied away from mainly for the reason you described, the end up falling over and becoming trash. They can also make the trunk a bit weak as it is not subject to the wind and can be a little wobbly, hence the need for staking. Cages around the tree are the most modern options that some places are choosing to adopt now.
I didn't watch this video at the time because I knew I'd want to save it for a time when I needed something slow and soothing, and tonight was that night. So grateful to you for making this kind of calm, nature based content. During daylight hours if I was this stressed I'd try to get out for a walk in a local park but that's really difficult with the long nights drawing in, so being able to focus on your foraging walk was just so perfect. I've always loved properly done breaded mushrooms. Its just a shame that these days so often when you find them in cafes and restaurants they are those frozen breaded button mushrooms that are OK but full of airspace and not very "mushroomy".
@@SyntaxErr19287 Can't beat a good ol greasy spoon style cafe. Just a shame they are getting harder and harder to find. Even harder to find a good one at that. The amount I have been to that don't even offer black pudding is almost offensive haha

Have you ever found any more "funky" mushrooms? In New Zealand, where I live, there are many native species of psychedelic mushrooms and the government quite funnily tries to destroy all of them to prevent people from eating them, but nature as expected, always finds a way. I would be interested to know your stance on the still-edible-but-not-really-a-meal mushrooms.
Have you ever tried to make a full, substantial meal with strictly foraged ingredients only? If not then it would be an interesting video to watch and a potential challenge idea. Great content as always Shrimp!
I've heard about celeriac wrapped in nori and then breaded and fried being used as vegan "fish", you could try it out. I'm sometimes cooking with but without the nori and it's a nice dish even as it is.
I love how you're not put off by natural "pests" and things coming into contact with your food. I think more and more people are conditioned into eating overly sterilised foods covered in plastic packaging and won't touch anything directly from the ground or tree. I've made crumbed mushrooms before but not in this "seafood" style. I'll have to give it a try.
Just a sidenote some Ppl actually develop some immune diseases or gastrointestinal diseases due to growing up in an overly sterilized environment. We are evolved with several species of parasites and actually develop some symbiosis relationship with them.
As someone who is a mostly "meat and potatoes" kind of guy I do really enjoy these videos where non-animal products are the star of the show. About everything is something I give a go at least. It always inspires me to try something different and from scratch rather than resulting to the usual stuff that's processed or ordered to the door. About the only thing I'd change would be to include the chips afterwards into the oil (perhaps adding a tad bit more for a "deep fry") other than that I'd only be disappointed that there wasn't enough for a second helping but then again what is for desert? Another great educational and entertaining video thanks a third time!
Great video , who dosent like a good ramble thru the woods. I've found the penny bun / porchini a few special times too. The flavour is so fine and delicate I wouldn't deep fry them or cover with other flavours . Definitely consider eating the stalks too, unlike other mushrooms the eddulus has a tender and tasty stem , big love
It's always surreal being in managed woodland. It's like you're in an open space but you're also secluded and enclosed at the same time. Depending on the topography, you could see someone hundreds of metres away, but have no idea they were there due to the silence of the place. Sadly these kinds of forests aren't very dense with wildlife due to the fact that they don't have the undergrowth layer he mentioned.
As someone else put it, your videos are always an adventure. Never know what you are going to do next. From mushroom foraging to critiquing fake meat. Bonus for me is that I can sit with my knitting and take in most of it.
I cannot begin to tell you how much all of your content enthrals, entertains and calms me. Thank you for everything you do Mr Shrimp, you make me regularly want to move from the Peak District to the New Forest!
as someone who has spent almost all his life right on the edge of the new forest i think you probably have it better up there, unless you are mad for horses
As a kid I always loved scampi, but I never knew it was shrimp! You learn something new every day. Also, loved the Will It Blend reference - brought a ridiculously huge smile to my face. I practically grew up with that show!
I used to live on the edge of a town. It wasn't a bad district, we had a lot of stores and everything, but it was 2 minutes away from nature. I could take a walk in a really small but moody forest, or go the other way and be at the riverbank in 10 minutes. Now I live in the middle of Budapest, and I miss nature and foraging
This made me so nostalgic for my childhood in rural Vermont. My two younger sisters and I had hundreds of acres of woods as our back yard and mushrooms were everywhere. Finding a fairy ring was always our goal in the autumn! Also, you've made me realize that I need to learn what edible things are growing in my area because there might be a day when this knowledge is necessary and not just trivia.
Id love to go for a walkabout with this man, he certainly knows enough to keep things interesting. Plus I could get some free mushrooms out of it and that's always a bonus.
Growing up near a small forest, it was easy to learn all mushroom varieties, of which there was just a handful. No surprises. No new species. Just 2 kinds that are poisonous, and they stand out. The rest was all good to eat. Lots of mushroom soup ever summer. One food that produced itself, was healthy and free. But I would never take a change. Good point that 99% sure isn't good enough. That's the best rule of foraging.

I've had breaded mushrooms before, but it never occurred to me to make my own. Think I'll have to knock up a batch with a chilli - or even Indian spice - coating. And dips!
Reminds me of going to the Bernie Inn in my childhood. Breaded garlic mushroom starter. Back when half a grapefruit, melon, and orange juice were considered starters. Avocado with prawns was very bourgeois.
Scampi in America is usually shrimp sauteed in butter with garlic, I think. Like at red lobster, if you want a reference on their website. Fried shrimp is just fried shrimp here, usually battered and deep fried.
Watching your foraging videos makes me wish I could handle the taste of mushrooms. I already have an appreciation of fungi due to yeast, but you've certainly made me appreciate mushrooms too
Another indicator-mushroom, if you like, is birch polypore (fomitopsis betulina). Not good eating really but since it causes birch trees to drop wood onto the forest floor you can find stuff that grows on dead birch wood anywhere you find it
I think adding a pinch of salt to the 1st breading might create more "shrimp illusion". Shrimps contain some salt. A bit more seaweed may also help. The trick on deep frying is to make sure the oil is well above boiling and always stays that way. The pressure of the steam coming out of the food stops the oil from going in. The way you put them in the pan one by one likely made sure of that. Another thought is to use conola oil. If you get it just a bit too hot it makes a slightly fishy smell. This might help with the illusion.
I've heard that monkfish was sometimes used for fake scampi (in the "olden days" - '70s - '80s) and judging from some of the stuff I was served as "pub scampi" (back in the day) I believe it!
Oh wow, I go to the New Forest often, but I never really thought of foraging there. This is very inspiring, makes me want to head right back there and try it for myself!
Hey Atomic Shrimp. Here in Canada we have lots of bolets. We remove the pores and the thin slime membrane on the cap and they aren't slimy anymore! Give it a try
yea theres a few things popping up around us but fairly sure its some type of amanita so nope were going out for a bit later next week to see if theres anything interesting we were going to look for chicken but apparently its out of season like i thought it was autumn but nope
In Norway, I found a lot of mushroom(chanterelles mostly) in summer. Then the weather turned really dry again for a long time, through much of the season. Now there's mostly a lot of false chanterelles(that likes those dry years), and there's a better chance for those mushrooms showing up late in the season.
I've been foraging mushrooms for the past 3 weeks. The kind that grow in grass and make you feel 'unusual'.... I love 'em... @6:25...Give the stem a squeeze, see if it turns blue... If it does they're wavy caps/blue leg brownies (Cyanescens)... They're kinda similar looking....
Another reason for an open understorey in the New Forest is the presence of Beech which has a dense, closed canopy which restricts light to the woodland floor
Deep fried battered mushrooms are one of favourite things in the world, going right back to before I stopped eating meat even. We had a local fish'n'chip shop that had them as a regular menu item. So good! I would have them rather than fish. Those were the days.
I moved to the New Forest about a year ago…have been looking forward to mushroom foraging but no luck so far for anything edible. No idea of good places! But I absolutely love it here.
The only time iv found amanita mascaria they were in the grounds of a hospital in my birth town. Unfortunately there was no indication of any edulis mushrooms. I did learn a while back that mascaria can be made into a salve and used topically (not orally) as a remedy for aches and pains (specifically athiritis). The only reason that came to mind is purely as the other half is having major issues with her knees recently and I did suggest she asked her doctor about whether theres a pharmaceutical salve that contains it. She has a chilli based one which didn't supprise me when she told me about it as I know chilli has pain revealing qualities as well
morrilles [chanterelles] are in season in southwest france, little yellow trumpets of joy! it's cousin trompette de mort is a grey version of the same form, not as tasty, pleurots too, a kind of oyster fungus, not too fond of those bit too watery, and of course ceps, huge ceps.
oh i love mushrooms. hoping to get some to grow in a terrarrium, like little tiny toadstools or something. i don't know how to "plant them" deliberately so it's usually a matter of "get a scoop of dirt from the woods, keep it damp and humid and see what happens" lol. never know what will happen

Pretty cool, I'll try this with the ceps, chanterelles and hedgehog mushrooms we found here in Scotland today. Loads and loads of edible mushrooms this year but getting bored of circling through the same 3 recipes with them.
Glad to see you managed to collect some muggies. Because the bracken can be a bad place for ticks and I know dogs can be prone to them, do they tend to go on the deer as well.

I live in New England United states and I also forage for mushrooms.. Well, I go out and photograph mushrooms and do not really trust my identification, so I never pick anything, I just look and photograph. Thank you for the great entertaining video.
I like the idea of using the nori sheet. I haven't tasted real fish for over 40 years...I bet it will taste real to me. When I was little scampi seemed to be creamy, wonder if I should add cream cheese? This recipe is tomorrow's project
Absolutely loads of Fungi up north - I could collect 100 ink caps or fly agarics etc. Many libs in the fields. A few destroying angels, wavies, seps. Everything is huge this year because Up North seemed to have even less rain than down south, for ages - and then it rained to hell !

If you don't like the slime, I would advise you use stems more, they are less slimy and defenetly not fibreous. It's actually a waste to use it in stocks.

Nori seaweed sheets for seafood flavour is a brilliant idea. I may have to steal that idea for my own cooking exploits

I make this ALL of the time using oyster mushrooms, Cajun fish fry and nori furkaki. Its one of my favorite things.
I think using russula xerampelina a mushroom that already have a fishy/shrimpy flavour might be perfect for this

This made me so nostalgic for my childhood in rural Vermont. My two younger sisters and I had hundreds of acres of woods as our back yard and mushrooms were everywhere. Finding a fairy ring was always our goal in the autumn!
Also, you've made me realize that I need to learn what edible things are growing in my area because there might be a day when this knowledge is necessary and not just trivia.

Growing up near a small forest, it was easy to learn all mushroom varieties, of which there was just a handful. No surprises. No new species. Just 2 kinds that are poisonous, and they stand out. The rest was all good to eat. Lots of mushroom soup ever summer. One food that produced itself, was healthy and free. But I would never take a change. Good point that 99% sure isn't good enough. That's the best rule of foraging.
We normally go back and remove the plastic tree covers when tree planting for conservation. By them planting oaks, maybe they're re-wilding the forest

I've had breaded mushrooms before, but it never occurred to me to make my own. Think I'll have to knock up a batch with a chilli - or even Indian spice - coating. And dips!
Reminds me of going to the Bernie Inn in my childhood. Breaded garlic mushroom starter. Back when half a grapefruit, melon, and orange juice were considered starters. Avocado with prawns was very bourgeois.
Their steaks were brilliant! There was also an ice cream pudding on a waffle. I still remember feeling grown up on my first visit!
Scampi in America is usually shrimp sauteed in butter with garlic, I think. Like at red lobster, if you want a reference on their website.
Fried shrimp is just fried shrimp here, usually battered and deep fried.

Another indicator-mushroom, if you like, is birch polypore (fomitopsis betulina). Not good eating really but since it causes birch trees to drop wood onto the forest floor you can find stuff that grows on dead birch wood anywhere you find it
I think adding a pinch of salt to the 1st breading might create more "shrimp illusion". Shrimps contain some salt.
A bit more seaweed may also help.
The trick on deep frying is to make sure the oil is well above boiling and always stays that way. The pressure of the steam coming out of the food stops the oil from going in. The way you put them in the pan one by one likely made sure of that.
Another thought is to use conola oil. If you get it just a bit too hot it makes a slightly fishy smell. This might help with the illusion.
For some reason, this channel was just this week, on my suggestion list. Now, I am an addict. But, that's perfectly fine with me.
I've heard that monkfish was sometimes used for fake scampi (in the "olden days" - '70s - '80s) and judging from some of the stuff I was served as "pub scampi" (back in the day) I believe it!

Hey Atomic Shrimp. Here in Canada we have lots of bolets. We remove the pores and the thin slime membrane on the cap and they aren't slimy anymore! Give it a try

In Norway, I found a lot of mushroom(chanterelles mostly) in summer. Then the weather turned really dry again for a long time, through much of the season. Now there's mostly a lot of false chanterelles(that likes those dry years), and there's a better chance for those mushrooms showing up late in the season.
I've been foraging mushrooms for the past 3 weeks.
The kind that grow in grass and make you feel 'unusual'....

Another reason for an open understorey in the New Forest is the presence of Beech which has a dense, closed canopy which restricts light to the woodland floor
Breaded, deep fried mushrooms are a very common dish in Central and Eastern Europe. Just don't pick the ones with little white dots on a red cap...
Deep fried battered mushrooms are one of favourite things in the world, going right back to before I stopped eating meat even. We had a local fish'n'chip shop that had them as a regular menu item. So good! I would have them rather than fish. Those were the days.
I moved to the New Forest about a year ago…have been looking forward to mushroom foraging but no luck so far for anything edible. No idea of good places! But I absolutely love it here.
The only time iv found amanita mascaria they were in the grounds of a hospital in my birth town. Unfortunately there was no indication of any edulis mushrooms. I did learn a while back that mascaria can be made into a salve and used topically (not orally) as a remedy for aches and pains (specifically athiritis). The only reason that came to mind is purely as the other half is having major issues with her knees recently and I did suggest she asked her doctor about whether theres a pharmaceutical salve that contains it. She has a chilli based one which didn't supprise me when she told me about it as I know chilli has pain revealing qualities as well
And natural making it yourself stuff is cheaper as well...like honey which is good for various things

morrilles [chanterelles] are in season in southwest france, little yellow trumpets of joy! it's cousin trompette de mort is a grey version of the same form, not as tasty, pleurots too, a kind of oyster fungus, not too fond of those bit too watery, and of course ceps, huge ceps.
I also found some small porcinis today, funnily enough, about 2 metres away from a trio of amanita muscaria. they must need similar soil conditions
I suspect an actual partnership between the two fungi
oh i love mushrooms. hoping to get some to grow in a terrarrium, like little tiny toadstools or something. i don't know how to "plant them" deliberately so it's usually a matter of "get a scoop of dirt from the woods, keep it damp and humid and see what happens" lol. never know what will happen

Pretty cool, I'll try this with the ceps, chanterelles and hedgehog mushrooms we found here in Scotland today. Loads and loads of edible mushrooms this year but getting bored of circling through the same 3 recipes with them.

I live in New England United states and I also forage for mushrooms.. Well, I go out and photograph mushrooms and do not really trust my identification, so I never pick anything, I just look and photograph. Thank you for the great entertaining video.

I like the idea of using the nori sheet. I haven't tasted real fish for over 40 years...I bet it will taste real to me. When I was little scampi seemed to be creamy, wonder if I should add cream cheese? This recipe is tomorrow's project
Absolutely loads of Fungi up north - I could collect 100 ink caps or fly agarics etc. Many libs in the fields. A few destroying angels, wavies, seps. Everything is huge this year because Up North seemed to have even less rain than down south, for ages - and then it rained to hell !

If you don't like the slime, I would advise you use stems more, they are less slimy and defenetly not fibreous. It's actually a waste to use it in stocks.
