First, there is no way Jason made that thing himself. I call shenanigans. Second, you have too temper your chocolate if you want it too work with the balloon or any other way. You can temper chocolate in the microwave easily. Third, you need to leave it in the freezer for a long time so it really firms up and that way it can keep its shape. These are all things I have learned.

I think it was an actual bowl covered in chocolate because 1) it's so thick it would easily be several pounds of chocolate, and 2), when he smashes the top , it looks like he hits the edge of it on the way down and the bottom doesn't split at all.

Really, with tomato paste and some spice paste, he did well in improving any failings the jarred sauce might have. It is a good guide for simple home cooking.

Also, I know they are intimidating but please read the ingredients. They are simply pickled in a harsh brine. The bright pink color comes from beet juice 🥤 The salinity in their brine has hardly any water and this changes the composition of the sausage to make it feel like “plastic”. They are a staple for us and I’m happy you gave them a try even though you had reservations 😊 Some others are Hannah’s brand pickled eggs (my favorite), Hannah’s brand pickled pigs feet/ear 😅 I am not a fan of the feet but these are historic snacks that kept people alive during times of struggle… They preserve for nearly forever lol AND They are also extremely important in reducing food waste by utilizing the “scrap parts” of the animal…. The pasta needed to be put through the pasta maker at least 8-10 times to get it the right texture. If you never made homemade pasta it’s best to look up the instructions. I’m also surprised there’s no oil but I guess recipes can vary
When you use a pasta roller machine, you are supposed to roll out the pasta on the thickest setting, then you are supposed to fold it up, and put it through again, and do this about 5 times until the pasta is more uniform and smooth. Then you are supposed to go through the settings, thickest to thinnest, until it's at the thickness you want it to be at... otherwise, you end up with pasta that rips... or that isn't uniform and smooth (like the streaks you had in your pasta)... also, beefier rolling it, you are supposed to knead the pasta dough, and then let the pasta dough sit for a while (wrapped in saran wrap) after you mix it up, but before you put it through the pasta machine, this let's the flour hydrate properly before you roll it out. If you had done these things, you would've had the pasta turn out far better.

For the chocolate, you need to temper it. Or only bouble boil half and then fold in the other half off the heat. This isn't true tempering, but it does the job. You also shouldn't use that oil on the balloon because that kind of oil will loosen the chocolate, making it slip off and not set properly. If you were to only use the bowl, I would rub coconut oil on the outside of the top bowl and then put it in the freezer the night before. I would then put some warm water in the bowl and swish it around to make the thin layer of coconut oil release.
