This is almost identical to the hushpuppy recipe that I've used for years. It's one that was handed down to me from my mother and the first time I remember eating them was in Mississippi as a child. I can't imagine having a fish fry without them. They also go great with BBQ pork. I've toyed with the idea of making a hushpuppy cornbread baked like regular cornbread in a cast iron skillet in the oven.

Doug, excuse the delay. I have owned 5 restaurants and two catering companies in Northwest Mississippi. Where did you experience similar hushpuppies. I have shared this recipe with many restaurants. I spent an entire weekend developing this recipe after a customer told me to shove the hushpuppies I was cooking up a donkeys A.

I have made a slight change for the better, after all of these years. Use self riding flour in place of All Purpose. SR was my original recipe, but for some reason I changed it. Now have gone back to the original.

Gina, I'm so glad you like them, and the fish recipe is so easy. I get a lot of grief from some people that I do not load up with spices, sauces, and dozens of other things. I am a firm believer, if you don't need to cover up the natural taste of catfish, simple is best. Let me know what you think. That recipe has been successful for me for over thirty-five years. Good recipe, but the true story of "Hushpuppies" came from run away slaves. They would throw them in different directions to get the tracking dogs off of their trail , so that the dogs would be distracted and the slaves could get further away.
That is a little different version than the one I have always heard. Thanks for sharing.
When you say chefs or cooks, they were also slaves and thats not how the story went. I was taught by my great grandmother who was born in 1893 and learned from her grandmother. Nothing worse than colonizer descendents taking credit for things their ancestors did NOT create. Give credit where credit is due.

Interesting. Re mise en place - Perhaps a quick trip to the market prior to making this video was in order to have enough eggs on hand. Re technique - This video validates professional chefs' strong recommendations to never crack an egg on the side of the bowl, as there is a risk of eggshell pieces falling into the mix as it does in this video. More troubling is this "chef" doesn't remove the piece of eggshell before stirring.
Thank you for your salient observation. This was my second video, and there is quite a learning curve. Unfortunately, I do not have a culinary team and high paid editors to catch these issues, though the lack of one egg, due to broken egg, did not alter the recipe. Your comment reminds me of a video I watched with a pianist who played one of the most beautiful pieces I have ever heard. The critic got hung up with a pencil that dangled on the top of the piano, missing the beauty of the music. Let me know when you do a video so I can critique the gnat flying in front of Mount Everest.
