So you top another "crop", collect it and spread it on the harvested ground with a straw cover? That's a nice practical solution to rehabilitating the bog

So after the straw is spread do you wait another year and repeat the same steps?

Hello, After the straw is spread to protect the reintroduced plants from dessication, we need to leave time for the plants to colonize the peat surface. The straw will decompose slowly in the following 5-6 years after the reintroduction. During that time, the straw acts as a moisture blanket for the mosses and greatly improves the chances of success.
We will repeat the same steps at the same location only if the restoration is not progressing toward a satisfactory floristic trajectory after a few years after restoration. In that case, we will reintroduce plants again, followed by another layer of straw.
      Have a great day!

So does it start to turn black deeper down, and then you sell it as "black earth" ?

Hello, The deeper down into the peat bog harvesting goes the more decomposed the peat becomes. Some companies will harvest very deep in the bog and sell the “black/Muck” peat. However, Premier does not harvest that deep and instead sprig live peat moss on top bog and the bog to begin to grow back. If we go down too far into the bog we get to a point where we can’t grow peat moss there again so we avoid harvesting black peat.

He’s not just digging up mud. He’s harvesting peat moss. This is most likely in Scotland but it’s done in Ireland also but not as much. There are modern ways to do this more efficiently but I’m guessing he’s just doing it the old way for education or nostalgic purposes
