This looks absolutely yummy. My family is originally from Spain and this stew is definitely Spanish style. I've been cooking for 45 years and I'm learning so much from your channel. The last beef stew I made, I copied you and used warm broth, cooked it in the oven and thickened it at the end with the butter/flour mixture. It turned out very well and no sticking at the bottom!

Now that was interesting. I have never tried lamb but it did look very tender when done. Does red wine add some kind of flavour? I have never used that.
Red wine in lamb stew adds flavour, richness and acidity to the meat and sauce. Thank you so much for watching🙏 Have a wonderful weekend 🤗
Wine adds a flavor that you can't reproduce with the usual subs recommended for it. There is no exact replacement so if you come across a recipe that recommends chicken stock, vinegar of some sort, grape juice, mushroom powder, etc... etc... you can get a flavor added to replace that missing wine flavor but it will never be an even close approximation of the actual flavor intended in the original recipe.

While living in Australia l learned to cook leg of lamb the Arabic way. Very easy. Pierce holes all over the leg put slivers of garlic into the holes. Season all sided with S & P. Open l can diced tomatoes put over the lamb, add olive oil all over. Cover with foil. Bake in oven for 2 hrs. Fall apart lamb. Serve over pilaf, roasted veggies and potatoes. Very easy receipe.

i enjoy your channel. looks like a great rezpar i will have to try it. i dont know if you are aware but when you use the parchment paper as a cover on hot food the plastic on the parchment paper melts and puts a lot of micro plastics in your food.
